Dukan Ancestor!!
Hi, we had this tonight and it was super! Again adapted from a GoodFood Mag recipe - it's not yet on their web site so I can't give the link. I give the quantities I used, and that made enough for a substantial evening meal for 2, although DH had some potatoes with it, I was full after scoffing my half 
Brush pork with 2 ts of the mustard, set aside.
In a large salad bowl, mix all the remaining ingredients except apples and lettuce to make a sauce. Season with S&P. Mix in the apples and top with the leaves but don't mix yet.
Griddle or grill (health Grill...) the pork for 3-4 mins on each side, until cooked through and golden, allow to rest for 1 min.
Toss the salad and pile onto two plates, slice the pork and arrange on top.

- 4 lean pork escalopes or loin steaks, trimmed of any fat
- 3 ts Dijon Mustard
- 1 tb skimmed milk (instead of Oil, sauce was too thick without it)
- 1 ts lemon juice
- 2 ts Worcestershire Sauce
- 3 TB natual 0% yoghurt
- 50gr Parmesan cheese, grated
- 1 large apple, cored, unpeeled and thinly sliced
- 2 Little Gem lettuces (or baby Romaine), separated and larger leaves torn.
