Monday 14th January 2013


Breakfast -
1 x wheatabix (1/2 HEb) with skimmed milk (1/3 HEa) and sweetener
banana


Lunch - Chicken salad with a small drop of salad cream (1 syn)
Muller light greek style yoghurt
apple


Snacks - Ham, chocolate (4 syns), small piece of cake (2 syns) 1 x Mini babybel light (1/3 HEa), 1 x Ryvita (1/2 HEb) with Phil extra light (1 syn)


Supper - salmon steak topped with a little pesto (2 syns) and parmesan cheese (part of HEa). Served with cubed potatoes & onion and asparagus


Drinks - Water (2 litres), sparkling fruit water (syn free), sugar free squash & Tea with skimmed milk (rest of HEa).


Exercise - Beginners club run - 1.75 miles run/walk (168 calories)

Oh dear!! My son's 5th birthday on 25th Jan has led to me being busy & lazy with writing my diet diary!!! Not to fear though as I still lost 1 pound last week & another today even with going off plan for a few days. Thats half a stone since restarting in Jan :D Must get back on it though as probably need to lose another stone before I'll feel happy! Hope to get back running properly too - managed 3 miles non stop on monday without any leg/knee pains so fingers crossed.

Could i get the minestrone soup recipe from you please ? :)
Hiya ;) I don't really use a recipe as such as it varies depending on what veg I have in the fridge. Ideally though I'd fry some onions, garlic, chopped bacon (fat removed) & celery in a big pan. Then roughing chop & add couple of carrots, leeks & courgettes plus a few potatoes and a sweetheart cabbage to the pan. Followed by chicken stock, tinned tomatoes and borlotti beans. I then season with oregano and bring to boil. Once boiling & turn it down and leave it to simmer for 30 minutes or so. I normally cook this in advance so end up heating it up later - no idea how long I cook it for in total but its just to make sure the veg is all cooked ;) Hope this helps x
