Pete’s Beef Stroganoff (2013)

Serves 4

Ingredients

1 Pack Schwartz creamy mild peppercorn sauce (4.5 syn)
1 Knorr herb stockpot
1 Chilli, deseeded & finely chopped (s) (sff)
1tsp paprika
1tbsp Carrs sauce flour (3.5syn)
1tbsp Worcester sauce
2 Onions, finely chopped (s) (sff)
2 Garlic cloves, finely chopped (sff)
2tbsp Red wine vinegar
200g Mushrooms, quartered (s) (sff)
300mL Knorr dark beef stockpot+ water
300mL skimmed milk (<1Hea/4=<0.25 Hea)
300g Cooked rice (ff)
454g/1lb extra lean casserole steak (ff)
Cupful of frozen peas (ff)

Method

Place the beef in a freezer for 30-45 mins then remove & slice thinly, place in a frying pan & add the flour, coat all sides of the beef then on a high heat, brown the beef, remove & set aside.
Deglaze the pan by turning the heat up, add the vinegar and scrape the pan until the base is clean, reduce the heat & add the onion, chilli, garlic, herb stockpot, mushrooms & paprika, cook until the onions are soft.
Make up the peppercorn sauce with the milk, set aside.
Add the beef, Worcester sauce & beef stock & peppercorn sauce, season to taste, bring to the boil then reduce to a simmer for 30 mins until the beef is cooked and the stock has thickened, or, pre-heat a slow cooker, add contents of the pan to the cooker, set to low and leave for several hours.
5 mins before serving add the peas.
Serve with the rice, cooked as per instructions on the packet.

Pete's Butternut Squash Chicken Curry

Serves 4

Ingredients

425g or ½ of a butternut squash (s)(ff)
1 onion, chopped (s)(sff)
1tsp "very lazy" garlic
1tsp "very Lazy" ginger
1tsp cumin
1tsp turmeric
1tsp coriander
1tsp garam masala
1tsp madras curry powder
1Kg chicken, pre-cooked, chopped into cubes (ff)
750mL chicken stock
400g Chopped Tomatoes (s)(sff)

Method

(This can be made in advance.)
Chop up the butternut squash into small cubes; leave the skin on, extra fibre!

Spray a large saucepan with Fry Light and add chopped onion, ginger & garlic, cook for 7 mins.

Add butternut squash, madras curry powder and chicken stock, cook for 40 mins, with a lid on the pan, remove from the heat and liquidize with a hand blender.

Continue.

Place back on heat and add cumin, turmeric and coriander, cook for 1 min, add tomato and chicken, cook for 20 mins or until chicken has been cooked through. Add garam masala 5 min before serving.
Serve on a bed of rice with a side salad.

Hiya do u know if this freezes well at all? I will be the only one who will eat this as hubby doesn't like bns the weirdo!

OMG!!! Just wanted to say a massive thanks to Pete for all of these inspiring recipes!! I've been reading through this thread for 3 days!! (Didn't find the index until page 54 I think it is lol!!) I have copied my fav recipes into my own little Pete cook book (printed out to keep in the kitchen) and tonight I am off on a spice shopping trip! I cannot wait to try the Peanut Curry and the Chocolate Philly Cheesecake.
I have also emailed my best friend the link as she is also starting slimming world and I know she will love it too!!
I cannot believe how lucky your wife is and I cannot believe some of the members on here have not tried to kidnap you and keep you in their kitchens ;-)

Just eaten the Peanut Curry... absolutely fabulous! only took a few minits to cook too... Hubby liked it too. Going to have a look and see what I can cook for tomorrow now. thanks for the tips and recipes..
