Hi Pete,
Just making your chicken and potato curry but for some reason it's red and not a lovely deep colour like yours! Sure I've done something wrong.
Thanks for all these recipes, you're brilliant!

Which recipe is it? I have over 600 recipes on the computer, several ones using chicken & potatoes.If I can have more details then I should be able to tell you more.

Pete’s Gajar Ka Halwa (2013)

Serves 2

Ingredients

1tsp butter (2.0 syn/2=1.0 syn per person)
1Tbsp grated nuts
2Tbsp Sweetener
3 Medium carrots, finely grated (s) (sff)
175mL Skimmed milk (1/2 Hea allowance/2=1/4 Hea per person)

Method

Finely grate carrots, dry on a kitchen paper towel, then add to a warm pan, add sweetener, then a small amount of milk, slowly heat for 4-5 mins, stirring all the time, add more milk until it becomes sticky, add the grated nuts, continue to cook for 15 mins, then add butter, mix well, turn heat off & leave to steam for a few minutes to ensure all liquid has evaporated. For best results place in a bowl, cover with clingfilm & chill in the fridge before eating.

I have looked at the recipe & the only things that would colour the food would be the tomatoes, & spices. Did you use all the ingredients or did you miss some out? If it tasted ok I wouldn't worry as several things can cause food to appear different from one recipe to another...

Pete’s Red Carmargue Rice salad (2013)

Serves 2

Ingredients

1 Bag of watercress (s) (sff)
1 Tomato, sliced (s) (sff)
1 Cucumber, sliced (s) (sff)
2 Eggs (ff)
30g Strong cheddar cheese (1Hea/2=1/2Hea per person)
100g Red Carmargue rice (ff)
120g Tin of sardines in tomato sauce (ff)

Method

Boil the rice as per instructions on packet, strain & cover, allow to cool.
Boil eggs for 6 mins, peel & set aside.
Prepare the other ingredients & plate up.
 
Pete’s 2 Minute Eton Mess (2013)

Serves 2

Ingredients


2 Mullerlight fat free yogurt, Strawberry flavour (ff)
2 Sainsbury’s Mini meringues (0.7syn each)
150g Aldi British raspberries (ss) (sff)

Method

In a dessert glass, break 1 meringue, add ½ tub of yogurt, top with ¼ of the raspberries, add the other ½ of the yogurt, top with ¼ of the raspberries, repeat with the other glass, chill & eat!

Pete’s Red Carmargue rice curry (2013)

Serves 2

Ingredients

1 Onion, finely chopped (s) (sff)
1 Garlic clove, crushed (sff)
1 Chilli, finely sliced (s) (sff)
1 Lemon, zested & juiced (s) (sff)
1 Tbsp. cumin
1 Tbsp. coriander
1 Tbsp. turmeric
1 Tbsp. madras curry powder
1Tbsp Schwartz “Tikka” spice
100g Sainsbury’s French Red Carmargue rice (ff)
200g fat free yogurt (ff)
250g of fresh chicken (s) (ff)
400g chopped tomatoes (s) (sff)

Method

In a glass bowl place the yogurt, Tikka spice, lemon juice, lemon zest & chicken, mix well & marinate for a minimum of 1hr, better if left for up to 24 hrs.

Fill a saucepan with cold water, bring to the boil, add the rice, bring to the boil then reduce to a medium heat & cook for 30 mins, drain in a sieve, place sieve on top of the now empty saucepan, cover with a lid & steam until the water has evaporated.
In a frying pan sprayed with frylight, cook the onion, garlic & chilli, cook until soft, add spices, cook for 5 mins then add the tomato, mix well then add the chicken, throw the marinade away. Cook for 20-30 mins until the chicken is cooked.

Pete’s Thai Black Rice Salad (2013)

Serves 2

Ingredients

½ Green pepper, cut into small pieces (s) (sff)
1 Little Gem lettuce (s) (sff)
1 Carrot, cut into fingers (s) (sff)
1 De-seeded Tomato, cut into small pieces (s) (sff)
2 Medium size hard boiled eggs cut into quarters (ff)
3 Cucumber rings, cut into small pieces (s) (sff)
4 Slices of cooked beef (ff)
60g strong Cheddar cheese (2Hea/2=1Hea per person)
100g Cooked, Thai black rice (ff)

Method

Cook the rice in boiling water for 30 mins, add salt, drain & cover, set aside.
Wash the lettuce leaves & plate up.
Boil the eggs until hard (5-6 mins) allow to cool then cut in quarters.
Prepare vegetables, meat, grate the cheese. Plate up.

Pete’s Salmon with Leeks & Thai Black rice (2013)

Serves 2

Ingredients

¼ English Mustard
2 leeks, washed & cut into 3cm pieces (s) (sff)
2 salmon fillets, seasoned with S & P (ff)
100g Black Thai rice (ff)
300mL Slimmed milk (<1 Hea/2=1/2 Hea per person)
Parmesan cheese
Schwartz Cheese sauce (7.5syns/2=3.75syns per person)
S & P

Method

Pre-heat the oven to 180C.
In a saucepan, prepare the sauce with the mustard, milk & cheese sauce powder.
Cook the rice in a saucepan of boiling water for 30 mins, season with S & P, drain & cover, keep warm.
Cook the leeks while you cook the cheese sauce, drain & place in an oven-proof dish, add the sauce & cook in the pre-heated oven for 10 mins until hot while the salmon is cooking.
In a frying pan on a medium heat, cook the seasoned salmon on all sides until it’s cooked as you like it. Plate up.

Pete’s Chicken Chasseur (2013)

Serves 2

Ingredients

1 Tsp Tarragon
1 Tbsp Tomato Puree (s) (sff)
2 Tbsp White wine vinegar
2 Chicken breasts cut into chunks, (s) (ff)
2 Garlic cloves (sff)
6 Shallots (s) (sff)
150g Mushrooms, cut into slices (s) (sff)
250mL Chicken stock
250ml Passata (s) (sff)

Method

In a frying pan or casserole dish, sprayed with frylight, brown the chicken, set aside. Deglaze the pan with the white wine vinegar.
Cook the shallots until soft, add the garlic, cook for 5 mins, add passata, tomato puree, and cook until the liquid has reduced by 50%.
Return the chicken to the pan, add mushrooms, stock & tarragon, and cook covered for 15 mins on a low light until the chicken is cooked.
This can also be cooked for several hours on an eco setting in the oven.

Pete’s Butternut Squash Chicken Curry

Serves 4

Ingredients

425g or ½ of a butternut squash (s)(ff)
1 onion, chopped (s)(sff)
1tsp “very lazy” garlic
1tsp “very Lazy” ginger
1tsp cumin
1tsp turmeric
1tsp coriander
1tsp garam masala
1tsp madras curry powder
1Kg chicken, pre-cooked, chopped into cubes (ff)
750mL chicken stock
400g Chopped Tomatoes (s)(sff)

Method

(This can be made in advance.)
Chop up the butternut squash into small cubes; leave the skin on, extra fibre!

Spray a large saucepan with Fry Light and add chopped onion, ginger &amp; garlic, cook for 7 mins.

Add butternut squash, madras curry powder and chicken stock, cook for 40 mins, with a lid on the pan, remove from the heat and liquidize with a hand blender.

Continue.

Place back on heat and add cumin, turmeric and coriander, cook for 1 min, add tomato and chicken, cook for 20 mins or until chicken has been cooked through. Add garam masala 5 min before serving.
Serve on a bed of rice with a side salad.

Pete’s super easy sweet &amp; sour



Serves 4

Ingredients

400g Tin of chopped tomatoes (s)(sff)
2Tbsp. of vinegar
330g/1 can of Fanta ZERO
1/2 pepper, chopped (s)(sff)
1 onion, chopped (s)(sff)
1 carrot, chopped (s)(sff)
200 tin of Pineapple, chopped (5 syns per tin)
0r 180g….4Heb/4=1 Heb
season with salt &amp; pepper
Method

Chop the onion, pepper, carrot &amp; pineapple as small as possible.

Add ingredients to a saucepan and simmer until thickened and hot. Season with salt &amp; pepper .

Serve on a bed of rice with stir-fry pork or chicken.

Serves 2

Ingredients

1Tbsp Paprika
1Tbsp Tomato Puree (s) (sff)
3 Garlic Cloves (sff)
6 Shallots cut in half (s) (sff)
6 Tomatoes cut in half (s) (sff)
8 Chorizo slices, cut into small pieces (4syn/2= 2syn per person)
250mL Passata (s) (sff)
250ml Herb stock
420 Sainsbury’s Mixed Beans in mild chilli sauce (s) (ff)
Sweet corn either fresh or pre-prepared
S & P

Method

Preheat oven to 180C.
In a casserole dish, sprayed with frylight, cook the shallots until soft, add the garlic, chorizo, cook for 5 mins, add beans, passata, tomatoes, tomato puree, season well.
Place in the pre-heated oven for 30 mins, or set the oven now to the “Eco” setting & leave for several hours. Serve with sweet corn.
