I have left the peanut curry for a later meal the same day but not tried to keep it for another day, if you cool the meal then store it in the fridge it should be ok the next day, any longer then freeze it.

Pete’s Weetabix Muffins (2014)
(Based on a recipe by Sharon Pitcher/ SW low syn meal ideas)

Makes 4 Muffins

Ingredients

1 Egg (ee)
2 Weetabix (1 Heb)
4 Tbsp sweetener (Aldi “pastry” sweetener)
25g Sultanas (3.5 syns/4 =0.875 syns each)
150g Tub Mullerlight, any flavour of choice (ff)

Method

Crush the Weetabix, add the other ingredients, mix well & pour into muffin moulds.
Cook in a pre-heated oven at 170C for 25-30 mins.

1 Egg (Ee)
2 Weetabix (1 Heb)
4 Tbsp. sweetener (Aldi “pastry” sweetener)

150g Tub Mullerlight, any flavour of choice (ff)

Method

Crush the Weetabix, separate the egg carefully, saving the white of the egg, add the other ingredients, mix well.
Whip the egg white until it forms peaks then carefully fold in to the other ingredients, using a metal spoon, share between the muffin moulds.
Cook in a pre-heated oven at 170C for 25 mins.

Pete’s Weetabix Ferrero Rocher (2014)

Ingredients

* ¼ Tsp Xanthan Gum
2 Pack of Options (any flavour) (2 syns)
2 Weetabix (1Heb) or (6.5 syns)
3 level tbsp. of nutella (12 syns)
25g Mixed nuts (8 syns)
Warm water

Method

Place the Weetabix & nuts into a food blender and reduce to small pieces. Place in a glass bowl & mix.

Place 3 level tbsp. of nutella into a microwave proof dish and microwave for 30 secs (600w), remove and add the Weetabix and mix until the liquid has been totally absorbed add warm water as required to keep the mixture moist. Add the Xanthan Gum.
Using a small spoon, scoop a small portion of the mix & shape into balls.

Place on a tray and place into the fridge to chill. When cold remove from the fridge.
In a bowl, roll each one in the option flavour of your choice. Return to the fridge until required.
* Only used as a binding agent not compulsory

Pete’s Bacon & Sausage pie (2014)

Serves 4

Ingredients

2 Pre-cooked sausages cut into slices (ff)
2 Eggs (ff)
12 Rashers of pre-cooked bacon with all fat removed (ff)
60g Strong cheddar (2 Heb/4=0.5 Heb per person)
400g baked beans (ss) (ff)
S & P

Method

Line a Pyrex dish with the bacon rashers, add the cut sausages. In a bowl mix the beans with the eggs & cheese then pure over the bacon & sausage.
Cook in a pre-heated oven at 180C for 20-25 mins until the top is cooked & bubbling.

Pete’s Chicken Burgers (2014)

Serves 2

Ingredients

½ Tsp Chilli powder
½ Onion (s) (sff)
1 Egg (ff)
1 Tsp Dried parsley
250g Pre-cooked chicken (s) (ff)
S & P

Method

Place the chicken, chilli, parsley & onion in a food processor, reduce to small pieces, place in a bowl, add the egg & S&P. Mix together & chill for 30 mins, remove from the fridge & mould into 4 burgers, place on greaseproof paper & chill until ready to cook.
Pre-heat the oven to 180C, place the greaseproof paper on a flat tray & cook for 15 mins then remove & turn over, continue to cook for a further 15 mins, serve with wedges.

Pete’s Mexican Boats (2014)

Serves 4

Ingredients

1 Carrot, finely chopped (s) (sff)
1 Onion, finely chopped (s) (sff)
1 Celery stick, finely chopped (s) (sff)
1 Knorr (Mexican) Flavourpot (1.5 Syns/4=< 0.5 syn per person)
1 Tsp Turmeric
1 Tbsp. Sweetener
1 Tbsp. Tomato puree (s) (sff)
4 Old El Paso “boat” tortillas (16 syns/4=4 syns per person)
200g Long grain rice (ff)
250g Lean beef mince (ff)
400g Chopped tomatoes (s) (sff)

Method

In a frying pan, sprayed with frylight, cook the onion, carrot & celery until soft, add flavourpot & mix. Add the mince & cook until browned, add tomato, tomato puree & sweetener, cook for 20 mins until its cooked & thickened.
In a saucepan cook the rice as per packet instructions, when cooked drain in a sieve, then place on top of the pan, cover & allow to steam on a low heat until all liquid has been drained from the rice.
Put the “boats” in a microwave & heat for 30 secs then plate up.

Pete’s Chicken & Mushroom with mustard sauce (2014)

Serves 2

Ingredients
1 Garlic clove, finely chopped (sff)
1 Onion, finely chopped (s) (sff)
1 Knorr chicken stockpot
1 Lemon, grated zest & juice (ss) (sff)
1 Tbsp. Wholegrain mustard
1 Tbsp. Schwartz “perfect shake” herb & spice blend
2 Chicken breasts (s) (ff)
2 Tbsp. White wine vinegar
2 Tbsp. Tomato puree (s) (sff)
60g Strong cheddar, grated (2Hea/2=1 Hea per person)
100g Mushrooms, quartered (s) (sff)
200mL Hot water
250g Fromage frais (ff)
S & P

Method

Place the chicken in a glass bowl, sprinkle the chicken blend, add the lemon zest & juice, mix well then cover, place in the fridge for at least 1hr.
Heat a frying pan, sprayed with frylight, add the onion & garlic, cook until soft, add the chicken stockpot, mix until dissolved, add the chicken & cook on a high heat for 15 mins until the stock has been reduced by half.
Add the mushrooms, tomato puree, water & white wine, season well, cook for a further 15 mins, check that the chicken is cooked fully.
In a glass bowl mix the mustard & fromage frais.
Add the cheese to the chicken & mix until the cheese has dissolved, remove from the heat, and wait for a couple of minutes then add the fromage frais, 1Tbsp at a time, mixing fully before adding more. Keep on a low heat, then plate up, serve with rice or pasta.

Pete’s Beef Tagine with prunes (2014)

Serves 4

Ingredients

½ Tsp Harissa
1 Tsp Cumin
1 TspTurmeric
1 Tsp ground ginger
1 Tsp Allspice
1 Tbsp. Lemon juice
1 Tbsp. Tomato puree
1 Cinnamon stick
1 Onion, finely sliced (s) (sff)
1 Garlic, finely chopped (sff)
50g Dried prunes, cut into small chunks (4 syns/4= 1syn per person)
200ml Stock made with a Knorr Dark beef stockpot & hot water
400g Chipeas (s) (ff)
450g Chuck streak, cut into chunks (ff)

Method

Place the tagine in a COLD oven & set temp to “Eco” or 90C & allow to warm up.
In a frying pan, sprayed with frylight, cook the beef until it is browned, remove & set aside.
Add the onion & garlic cook until soft, In a small dish mix the tomato puree, harissa & lemon juice into a paste & add to the pan, add cumin, turmeric, ginger, allspice, stock, return the beef & mix well, remove the tagine from the oven, add the contents from the frying pan & place the cinnamon stick on top, place lid on & return to the oven. Cook for a minimum of 1 ½ Hrs. ½ Hr before you want to eat your meal, add the chickpeas & prunes, increase the heat to 160C & cook for 30 mins.
Serve with rice of your choice.

Pete’s Chinese Chicken Curry (2014)

Serves 2

Ingredients

* ½ Tsp Chilli powder
½ Tsp Ginger powder
½ Tsp Garlic powder
* 1 Tsp Madras curry powder
1 Tsp Turmeric
1 Tbsp. 5 Spice
1 Tbsp. Tomato puree
2 medium size onions cut into quarters (s) (sff)
2 Spring onions cut into 30 cm pieces (s) (sff)
100g Garden peas (ss) (ff)
150g Pre-cooked chicken (s) (ff)
500mL Chicken stock
* For a hotter end product increase these amounts

Method

In a frying pan, sprayed with frylight, brown the chicken, add the onion & the spices, chicken stock & bring to the boil & then reduce to a fast simmer for 20 mins, add the tomato puree & thicken remaining liquid. 5 mins before serving add the peas & spring onions.
Serve with rice of your choice.

Pete’s Mexican sausage & beans (2014)

Serves 4

Ingredients

1 Onion, finely chopped (s) (sff)
1 Knorr Mexican flavourpot (1.5 syns/4=0.375 syns per person)
1 Tsp rosemary
2 Rashers of smoked bacon, finely chopped (ff)
4 Sainsbury’s B.G.T.Y. sausages (4 syns/4= 1 syn per person)
400g baked beans (ss) (ff)
400g Cannelloni beans (s) (ff)
400g Haricot beans (s) (ff)
500mL Passata (s) (sff)

Method

Cook the sausages in a pan, sprayed with frylight, remove from the pan, and cut each sausage into 4 pieces, set aside.
In a casserole dish, sprayed with frylight, cook the onion until soft, add the bacon, sausages, all the beans & the flavourpot, mix together then add the passata & sprinkle the rosemary over the top, bring to the boil then reduce the heat & cook on a “Eco” setting in the oven or set to 90C, cook for several hrs, serve with rice.
