looks wonderful, do you have the recipe? Wonder if I could make it with Quorn as I tend to do red/green days

One of the easiest lunches ever and very tasty!

Pasta, grated courgette, hot smoked salmon flakes, lemon juice, fresh dill, salt & pepper!

scuse me for being a thick chef - do you cook your courgette first?

Crab Stuffed Haddock

This is so nice. I always forget how yummy it is!

Serves 2
2.25 syns per serving

1/2 stalk celery, finely chopped
2 spring onions, finely chopped
1 garlic clove, crushed
1 slice wholemeal bread, crusts removed (1.5 syns)
1 can crabmeat, drained
salt & pepper
1 egg, beaten (only need 1/2 the egg)
2 tbsp parmesan cheese (3 syns)
1 tbsp lemon juice
1 large tomato, deseeded and chopped
2 haddock or cod loins

1) Spray a pan with frylight and saute the spring onion, garlic and celery until softened. Remove from heat.

2) Add the remaining ingredients to the pan and mix well.

3) Put the haddock or cod in a dish sprayed with Frylight. Top with the stuffing and spray the stuffing with Butter Frylight. Bake in the oven on 180 for about 20 mins or until the fish is cooked and the top is golden.

wow that chicken looks amazing how did you make it x

thanks, I got it out of my chicken cookbook -

Mix
4 tbsp fat free natural yogurt
2 garlic cloves - crushed
1 tbsp golden syrup (2 syn)
1 tsp ground ginger
1/2 tsp cardamon seeds
1/2 tsp ground coriander
1/4 tsp ground cumin
1/4 tsp ground turmeric
2 tbsp fresh lemon juice
1 tsp salt

this is enough for upto 8 chicken pieces, recipe says to use whole chichen cut into 8 sections, but I use all breasts. So only about 1/4 syn if you use 8 pieces.

Make slashes in your chicken and put it in marinade for as long as you can, but at least an hour.

Oven at 200c. Line a tin with foil and put chicken in. Put 5 fl oz of water into bottom of foil and pour any remaining marinade over top of chicken .

Bake for about half an hour.

Hi Sarah,

It was a concoction i made as i went along lol.

It was just some 0% natural yogurt, a sachet of options white choc,(2.5 syns) then put in a ramekin, sprinkled with caster sugar (1.5 syns) popped under the grill, quick and simple but yum!!
