extra lean mince, fine chopped onion, egg to bind, salt and pepper to taste.. ( I add a clove of crushed garlic to my onion mix as well )..
form and fry in frylite sprayed pan..
 
Made some sw blueberry muffins and quite tasty they were too with a dollop of fromage frais!

Were they the muffins from the little booklet that came with a mag one month??

What was the syn value per muffin?

It was 3.5 in the book the only dif was I used bran flakes instead of all bran

7oz fresh blueberries plus extra to decorate
1oz Kellogs all bran
2 tbsp sweetner
2fl oz of freshly squeezed orange juice
2oz self raising flour
2 level tsp of baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
2 eggs lightly beaten
fat free natural yoghurt to serve

Preheat oven to 200 c /gas mark 6
Place the berries, all bran, sweetner and juice in a bowl and mix together
Sift in the flour, baking powder and spices
Add the eggs and mix together until well combined
Spoon into 6 muffin cases and bake for 15-20 mins
Serve with natural yoghurt and the extra blueberries

I will definately give them a go, will prob use some fibre one instead of all bran and whole wheat self raising flour, as I tend to avoid white carbs.

My favourite new salad, lettuce, cherry toms, cucumber, red onion, red grapes, bacon, light babybel and E.L Mayo, served with a small part baked roll. YUM!
 
Here's what we had for dinner, seafood paella with prawns, monkfish and king crab claws. Yum!
I do eat an awful lot of rice don't I...? :D
