Had the second salmon burger patty for lunch today! Had it with rice and a salad. Didn't have a sauce so I added some soy sauce, oyster sauce, dried chilli and lemon juice to the pan, let it sizzle a bit and drizzled over the rice and salmon. I added some fresh coriander leaves to the salad since it looked like lunch was taking an Asian twist! Deelish!!

Yum!! What do you put in your quiche? Eggs & cottage cheese? Quark?
 
Rosti Quiche recipe

I can;t take all the credit, I adapted a recipe from Slimming Eats.

I use an 8" loose bottomed cake tin.

Ingredients

Crust
5 medium potatoes, grated
Salt and Pepper

Base Filling
300g fat free cottage cheese
4 eggs
2 onions chopped and browned

Additional (Day dependant)

Brocolli + HE Stilton (Green)
Ham + Red Peppers

Preheat over to 200c

Grate potatoes and squeeze as much liquid as possible using a clean tea towel. Spray tin with fry light then flatten the pototoe mixture over the base and up the sides of the tin. Bake in the oven until golden and dry(ish) but not too dark.

Mix up the cottage cheese eggs and onions and pour into potatoe base.

This is where you can get creative.
I have done half the quiche with steamed brocolli and Stilton and the other half chopped up ham and peppers.

Pop back into the oven for another 30 mins or until set and slightly golden brown.

I like to take it out of the tin half way through and transfer onto and grill tray so the bottom can dry out (can be a bit tricky though).

Enjoy - This goes into my top 10 SW receipes so far! Thank you Slimming Eats

Sounds amazing! Will bear that in mind next time I'm making a SW quiche!
