Made coleslaw again! to have with Spag. Bol...................


Pete’s Coleslaw 3




Ingredients

1 Small White Cabbage
1 Spanish onion
1 Red Onion
1 Large Carrot
Hellmann’s Lighter than Light Mayonnaise (1tbsp=0.5syn)

Method



Shred all the vegetables to the same size and mix together in a serving bowl.
Add salt & pepper. Spoon in the mayonnaise & mix to suit!

Pete’s Spaghetti Bolognese


Serves 4

½ Syn on Ee

Ingredients

2 small onions, chopped
1 garlic clove
1 small carrot, chopped
1 red pepper, deseeded & chopped
1 green pepper, deseeded & chopped
125g mushrooms, chopped
1 large celery stick, chopped
454g low fat beef mince
1 400Ml can/box of chopped tomatoes
1 Tsp Worcester sauce
1 Beef Stock Cube
2 level Tbsp tomato puree
1 Tbsp mixed Herbs
400g cooked wholemeal spaghetti
Parmesan Cheese

Method

In a frying pan cook the meat until any fat is cooked out & browned. Put to one side.

In a deep saucepan spray with Fry Light and cook the onion until transparent, then add, garlic, carrot, peppers, mushrooms and celery and cook for 10 mins.

(If you want a smooth sauce then remove from the heat and using a hand blender blitz to a smooth sauce.)

Add the meat and the tomatoes, crush the stock cube over the meat, Worcester sauce and season to taste, cook for 30 mins until it thickens.

Add spaghetti to the sauce, mix and serve, sprinkle with Parmesan if required. Enjoy with salad!

5 to 6 large parsnips
1 large onion
1 tsp turmeric
1 tsp garam masala
4 cardamon pods
1tbs curry powder ( strength of your choice )

I have a soup machine so I just bung all the ingredients in there

MsMuppet's Chicken Tikka Masala (adapted from Jamie Olivers Chicken Tikka Masala)

First, you need to make a kind of semi-dry curry paste with the following (i use a pestle and mortar but i suppose you could whizz it in a little blender thingamajig too)

2 cloves of garlic
1 tsp garam masala
1 tsp ground coriander
2 tsps hot paprika
1 tsp ground ginger
1 red chilli, chopped
1 large bunch of fresh coriander
1 tbsp desiccated coconut


Spray a non-stick pan with fry light and fry:
1 large sliced onion till soft

Add some chopped chicken to the pan (I used 1 large breast for 2 portions but it's free so you choose how much you'd like).

Add the 'paste' and fry over a gently heat for about 3-4 minutes then add:
1 tin of chopped tomatoes and
approx. 1/2 cup of chicken stock


Pop a lid on it and let it cook for approx. 30mins, adding a bit more stock if neccesary. Once it's finished cooking add:
1 tbsp of red.fat creme fraiche stir and serve.

Todays Dinner...............


Pete’s Sausage & leek casserole with chive mash

Serves 2
Ingredients

4 pork sausages
1 Spanish onion sliced
200g sliced leeks
4 cloves garlic sliced
2 sticks celery sliced
1tsp oregano
400ml passata
200mL chicken stock
2 bay leaves
Salt and pepper
800g/3 large potatoes, peeled and cut into 4
1 Cup of frozen peas
Salt and cracked white pepper
1 bunch of chives finely chopped
100mL Skimmed Milk (from your daily allowance)
Method
Preheat oven to 180ºC / 350ºF

Fry the sausages in a casserole dish until golden brown, remove with a slotted spoon. You may need to do this in two batches

Add the onions, leeks, garlic, celery and sage and cook until the mix starts to brown slightly

Add the passata, stock and bay leaves and then season with salt and pepper, add the sausages put the lid on and cook in the oven for 20 minutes. Remove the bay leaves and serve with the mash.
Meantime put the peas in a pan of boiling water & cook for 10 mins before the end of the casserole cooking time.
Cook your potatoes in a medium sized pan, cover with salted water and bring to the boil. Simmer gently until cooked. Once cooked, drain and mash the potatoes, add 100mL of skimmed milk, season and add the chives.

I've just made the most delicious turkey thigh curry, but unfortunately we scoffed it before I remembered I should take a picture!!!
