wow all looks gorgeous as usual!. just wondered if the watercress pesto was free on a green day??.. i want that for my lunch now!!
 
Yes its free if you count the parmesan and olive oil as HEXs!
 
Puy Lentil Soup....................


Pete’s Puy Lentil Soup

Ingredients

400g Puy lentils
1 onion, finely chopped
1 tsp garlic salt
1 tsp minced fresh thyme leaves
1 tsp ground cumin
1 celery, finely chopped
1 carrot, finely chopped
1 Knorr chicken stock pot
Hot water
1 tbsp. tomato paste (1 syn)

Wash the Puy lentils until the water runs clear, put in a saucepan and cover with boiling water, leave to soak for 15 mins.
Drain and leave on one side, sauté the onions, carrot and celery then add the chicken stock pot contents, blend in, then the cumin, thyme, tomato paste & Puy lentils. Cover with water, bring to a boil and then reduce heat and simmer for 1hr with a lid on the saucepan, checking that the water always covers the lentils.

I open a tin of butter beans
put in blender add a tiny bit of water ( or they go a bit thick )
plus one tablespoon quark, salt and pepper
I also added a pinch of paprika this time to give them a zing
but it is optional
then blend .....
 
Dinner tonight.....was delicious. Chicken breast filled with tomatoes, light feta and extra light Philly cheese with garlic, wrapped in bacon and piri piri seasoning, SW roasties sprinkled with garlic and sea rock salt with carrots and savoy cabbage.

Yesterdays Dinner.............


Pete’s Macaroni Cheese & Chips


Serves 4 people
Less than 2.5 syns each
1 Hea

Ingredients

Coleman’s Four Cheese Sauce Mix (9.5 Syn /4 people =< 2.5 Syns each)
300mL low Fat Milk (from daily allowance)
56g Low Fat Cheddar
1 Tsp. Colman’s Mustard Powder
1 Large tomato, sliced thinly
Sainsbury’s 100% Bulgar Wheat Macaroni
(200g starter meal)(300g main meal)
2 Large Potatoes

Method

Place macaroni in a saucepan of boiling water, add salt and boil for 8 mins for “Al Dente” or 10-12 mins fully cooked.
Remove and place in a sieve to remove water, empty water from the saucepan.

Cut the potatoes into chip size and part boil for 5 mins.
Remove and dry then place in an ovenproof shallow dish sprayed with Fry Light, season, and cook in the oven at the same time as the macaroni.

Put the Four Cheese packet contents, and the mustard into a medium sized saucepan, mix a small amount of the milk, stir to a paste, and add the rest of the milk while heating the mix until it boils, stirring continuously, simmer for 2 mins or until it thickens.

Tip the Macaroni into the sauce, mix together then pour into an oven-proof dish, cover with sliced tomatoes then add 56g of grated Cheddar (from your daily allowance) and place in a hot oven (180c) until the cheese melts.

DINNER
Made a gorgeous dinner tonight!
Roasted gem and acorn squash filled with cannellini bean and chorizo stew (2)
Griddled aubergine, courgette and red peppers drizzled with balsamic vinegar :drool:

Used these squashes (gem and acorn) DH and I had half of each. He prefered the gem I much prefered the acorn as it had a denser flesh, very potatoey and sweet. The gem was lighter and fluffier and a bit sweeter.

Dinner this evening...Beef, butternut squash, kidney beans, carrots, celery, tomatoes, leeks and spices with SW potato wedges...with a big dollop of FF natural yoghurt to cool it down abit ( ok ALOT!) :sign0131: loads left to batch freeze :D

Pork Loin steak with piri piri seasoning, jacket potato with cauliflower cheese ( the sauce made with water not milk) and mushrooms nuked with a dessertspoon of water. Family loved it and chicken mad Daughter kept saying ' can I steal the chicken off your plate!' I take that as a compliment that she enjoyed it way too much being she normally 'doesn't do pork' :8855: Have to thank Erm's for this one as I am sure it's the piri piri seasoning she told me about that made youngest daughter look at pork in a whole new light...Cheers Erm's! :)

Disaster yesterday!
Made Jambalaya and thought that I would do it in the slow cooker, left it on "low" while we went shopping, got back and all the liquid had cooked out! (only out for 1 hr) added more stock but the cheap Morrison's long grain rice went into mush! First and last time we buy that...still eatable but will stick to my own recipe and use the deep pan!

Thankfully the Supper was ok, Salmon on a bed of Couscous
