My favourite Cafe meal!........Sausage,Egg & Chips.


Pete’s Sausage, Egg & Chips


Serves 2

Ingredients

2 large Potatoes
4 Sainsbury’s low fat Cumberland Sausage (0.5 syn each)
2 medium Eggs

Method

Cut the potatoes into chip size and part boil for 5 mins.

Remove and dry then place in an ovenproof shallow dish sprayed with Fry Light, season, and cook in the oven at 200c for 30 mins or until browned.

Place sausages under the grill and cook until browned.

5 mins before the chips are cooked place a small pan sprayed with Fry Light on the cooker to heat up, cook an egg until the base has gone white then cover the pan with an oversize lid and cook until the egg is cooked to your liking.

Made a gridled flank steak for dinner, with potato & beetroot wedges and swiss chard

Curry loaf, sorry one of those days where so hungry we ate it with baked beans grilled tomatoes and small jacket potato without photographing. Here are the leftovers.

Do you have the recipe for the loaf please?
 
Recip found on here

1 packet Batchelors mild curry rice (Syn free) Other brands are synned but about 1 syn etc)
1 tin of Asda chick pea Dahl
3 eggs

Cook rice as per instructions on packet, basically add boiling water and simmer for 20-25 mins, I removed sultanas (personal taste).

Cool slightly by adding tin of dahl, then beat eggs, mix everything together and put in a loaf tin.

Cook for 25-30 minutes at 160 (fan)-180 deg.

I cooked at 8am this morning and reheated tonight was fab.
tastes fab. Make sure you add the superfree baked beans, salad etc.

I am going to add peppers and onions next time I think to add more superfree.

Serves 2
Ingredients
1Lb Potatoes

1 Medium Leek, finely chopped
handful of peas
1tp “very easy” garlic
sprinkle of thyme
1tsp mustard powder
100ml vegetable stock
84g low fat cheddar (2xHea)
Method

Boil potatoes and mash up, set aside and spray large frying pan with Fry Light and fry onions, leeks & peas for 6-8 mins.

Add the mash, garlic, thyme, mustard, stock and half the cheese, mix altogether and put in ovenproof dish and sprinkle the rest of the cheese on top and bake for 20 mins on 200c.

Seaved with a side salad, followed with fruit!

This looks great Pete! I have a ton of leeks and potatoes that need using up so this is perfect! Great with a roast I imagine :D

Made this last night using the "super easy sweet n sour" recipe from this forum, had it with a bed of rice and stir-fry pork......

Pete’s super easy sweet & sour



Serves 4

Ingredients

400g Tin of chopped tomatoes
Tbsp. of vinegar
330g/1 can of Fanta ZERO
1/2 pepper, chopped
1 onion, chopped
1 carrot, chopped
227g tin of Pineapple, chopped

Method

Chop the onion, pepper, carrot & pineapple as small as possible.

Add ingredients to a saucepan and simmer until thickened and hot.

Serve on a bed of rice with stir-fry pork or chicken.
