Another use for Instant Mash..............


Pete’s Instant Mash Gnocchi


Serves 2
Ingredients for Gnocchi
125g Instant Mash (ff)
1 Egg, whisked (ff)
1tsp Garlic salt
1tsp oregano
1tbsp Schwartz Cajun powder
4tbsp chopped parsley

Method

Mix the Instant mash with the Cajun powder, herbs & garlic salt, make up as instructed on the packet, add 1 egg & mix well, cover & place in the fridge overnight, next day remove & roll into golf ball size balls. Set the oven to 200C, spray a tray with Fry Light, place the balls in it and cook until browned (20mins).

Ingredients for the sauce

½ tsp red chilli powder
1 Red Pepper (s) (sff)
1 Onion, finely chopped (s) (sff)
1 tbsp. sweetener
2 garlic, finely chopped (sff)
3 tbsp. chopped parsley
400ml Passata (s) (sff)
Mixed dry herbs
Over a naked flame burn the skin of the pepper, remove from the flame & peel, deseed & cut into small pieces. In a saucepan, sprayed with Fry Light, cook the onion, garlic, chilli flakes & pepper until soft, add the passata, sweetener, dried herbs, bring to the boil then reduce the heat to a simmer for 20 mins.
Plate up the Gnocchi with the sauce purred over and enjoy with a side salad.

I dont measure recipes so basically its
half a pack of extra mince mince (250g)
2 small red onions,
tsp of garlic powder,
someone said to me they sometimes put a baby bel inside!
I also put a few splashes of worcester sauce in.

added my onions to the blender while it was on, whizzed til in pieces, then added the mince in 2 seperate bits, then added the garlic powder and then the sauce. Whizzed for about a minute, it looked like tuna haha but it tasted so good! and i think without the egg like i normally do it tasted much fresher and better

tbh i duno, i have a food processor and i call it a blender cos im so used to having a blender.. sorry. I would have thought maybe if you add a bit at a time it would be ok in a blender?? xx

Homemade Nandos with Mexican rice.The Nandos Extra hot Peri peri marinade is 1/2 syn per tablespoon and as I want to keep low and don't use as much sauce I choose to use the extra hot, milder ones are higher syns.

I use the Nandos marinades regularly, and either, medium, hot, or extra hot are only half a syn a tablespoon, but if you use more, the syn values vary.
 
That nandos chicken and rice looks soooo yummy! Will have to make myself some soon as I am having major nandos cravings!

The korma was just a couple of tbs of schwartz korma curry powder, chicken stock, garlic and a little bit of chilli with 100ml of reduced fat coconut milk added which is 4 syns but divided by two is only 2 syns per portion. Just fry off some chicken and veg in fry light and add the rest of the ingredients and simmer down! I also stirred some FF yogurt and a tsp of almond extract through before serving.

The smash chicken was chicken dipped in a mixture of egg, a chicken oxo cube and some chilli powder and then dipped in a combination of smash potato flakes, paprika and about 1/4 pack of nandos bbq rub mix which is 1 syn. Bake in the oven with some fry light for about 20-25 minutes. It's really tasty!

I add in chicken & bacon or wotever else takes your fancy and you can get use it as a full meal this way or as recipe for the side of a meal - both ways are lovely :)
