Pete’s Asian Salmon with stir-fry noodles

Serves 2

Ingredients

*1Red chilli, finely diced (s) (sff)
*1 Pepper, finely sliced (s) (sff)
*1 Bunch spring onions, sliced (s) (sff)
*1 Carrot, cut into matchsticks (s) (sff)
* Or a pre-packed stir-fry
1tbsp light soy sauce1tbsp sunflower oil (6 syn/2=3 syn per person)
1tbsp rice wine
1tbsp sweet chilli sauce (1.5 syn/2=0.75syn per person)
2 salmon fillets (ff)
150g dried noodles (ff)
Chopped fresh coriander
Drizzle of honey (1tbsp-2.5syn/2=1.25syn per person)
Method
Preheat the oven to 180°C, fan 160°C. Place the salmon fillets in a shallow dish. Mix the soy sauce, honey, rice wine and sweet chilli sauce, brush over the salmon and leave to marinate for 15 minutes, if possible. Place the salmon on a greased baking tray, reserving the marinade. Bake for 12-15 minutes until tender and the fish flakes easily. Meanwhile, cook the noodles as directed on the packet. Drain well.
Heat the oil in a wok and fry the pepper for 2-3 minutes until slightly softened. Add the chilli and cook for a few seconds. Add the drained noodles, reserved marinade, carrots and spring onions. Heat through, then stir in the coriander. Serve with the salmon on top.
* Or use stir-fry pack, cooked as instructed, then add the noodles, serve with the salmon on top.

Just si you know Pete you haven't added the syns for s oil & honey incase anybody gets confused :)

That looks lovely. Is it syn free on EE only. I only do red and green days, so am wondering what the syn value would be on a re day for the smash

Free on EE. You could do it on green and use the chicken or fish as your HEXB, then the smash would be free.

On a red day;

Smash, Original, made up with water, 100g made up

Knocked this up to use the yogurt before the end date!

Pete’s Chicken & Rice with Yogurt Sauce
Serves 2
Ingredients
1 Onion, finely chopped (s) (sff)
1tsp lemon juice (ss) (sff)
1tsp Olive oil (1Heb)
1tsp Garlic Salt
1tbsp Fresh parsley, finely chopped
1tbsp Sweetener
2 Chicken breasts (s) (ff)
100g long grain rice (ff)
170g Tub of 0% Fat Free Yogurt (ff)
Piri-Piri seasoning
Small cup of frozen peas (ff)
*(Turmeric)

Method

Pre-heat the oven to 180C.
Place the chicken breasts in an oven-proofed dish, coat the chicken with the olive oil, sprinkle with Piri-Piri seasoning & cook for at least 30 mins or until the chicken is cooked.
In a bowl mix the yogurt, chopped parsley, seasoning until smooth, add the lemon juice, sweetener & mix well, tip into a small saucepan & heat slowly on a low heat, stirring all the time.
Cook the onions until soft, heat the peas, mix together & set aside. Cook your rice as per instructions,
*adding turmeric to colour the rice if you want to, add cooked onion & peas and plate up. Add the chicken & cover with the yogurt sauce.

My SW adaptation of Delia's Alpine Eggs..............

Line a ramekin with a low fat cheddar cheese slice, break an egg ontop, season with black pepper, and top with another low fat cheddar slice, and bake in the oven until bubbling, and the egg set to your liking (about 15mins) = HExA

Served with wholemeal toast (HExB)

I fried some onions and garlic until soft, then added a tin of tomatoes a tin of batchelors mushy peas and a tin of beans (some people use 2 and some people add mushrooms too), let it simmer away for about 5 mins then added curry powder, let it all cook through then i blended it up. I fried some chicken in a seperate pan then added some of the sauce to the pan and let it cook through and i froze the rest of my sauce for antoher time.

For my rice i just boiled some boil in the bag basmati rice in a veg stock cube, when cooked i transfered it to a frying pan with frylite and fried with soy sauce , then added an egg and mixed through, it was delicious. xx
