Vixter's Magic Pancakes!!! Delish!
Magic Pancakes (but i microwaved them and made two decent sized pancakes)

35g Porridge Oats (HEB) or 1 sachet of Oats So Simple
1 syn free yogurt such as Muller Light (I used the ltd edition Mint & Choc cos I don't like them much)

1.
Mix the Oats and Porridge well and leave in fridge overnight
2. In the morning beat 2 eggs and add to magic mix stirring thoroughly (you can add sweetner but I didnt bother)
3. Right, I tried frylighting them it was a nightmare so...

4. Take a bowl and pour half the mix into the bowl, microwave for 1 min, then micro again for about 30 seconds til set, leave for a min or so to cool

5. gently ease from bowl by moving with spatula then tipping onto a plate

Pancake 1.Banana, Strawberries and Syn Free Lemon Curd

Pancake 2. Lemon Juice, roll and sprinkle with one tsp (1syn) of sugar
 
Just eaten the leftovers from the curry I made on sat. Seriously good (if I do say so myself!)

I made Tadka Dhal, Sag Aloo and hot chicken curry served with boiled rice. For the entire plate there was 1/2 syn for some Schwartz spice mix for Sag Aloo ( used half pack - 4 servings).

It felt like a real treat and I'll definitely make it again, great if you had people over, you can make loads of it and it tasted even better after a couple days. :)

WOW!! How do you make sag aloo? I have some vegetable pakora that I made in my freezer and would love to have something to put with them for side dishes when I next make a curry

Here u go:-

So I used 3 breasts plus a Diddy bit that was in the pack for my youngest who eats like a sparrow .
I emptied a pack of instant mash into a bowl, added 2 tsp of salt, a generous twisting of black pepper, 2 -3 tsp Cajun mix, 2 tsp onion powder, 2 tsp garlic granules. Mix together then I tasted a finger tip worth to see if it had taste and it seemed fine. I slit breasts open added a mix of garlic herb Philly and extra chopped garlic. Dipped into beaten egg and dipped into mash mix then egg again and mash again . Place onto frylighted tray and bake 20-25 mins til browned and cooked . Tasted lovely but I would add extra spices next time to make the taste a little stronger.
 
Tried to make pork pies! Made the 'pastry' out of smash and then filled with Pek 30% less fat chopped pork. They tasted really yummy and worked out at about 1/2 syn each!

Tonight was Mexican night - so taco trays for us! Filled with quorn chilli, cheese, plain yogurt (instead of sour cream) and jalapeños. Taco trays are 2 syns each so for 6 syns I had a feast! Mmmmm :)

SW's Chicken Tikka Masala

Hey guys! I got this recipe from SW's website and made it for tonight's dinner.
I know it's not my own recipe, but I usually like to see how something looks when it's cooked before I try it.

For anyone who hasn't tried it yet it's a must.. I had it with boiled rice and a salad of lettuce, tomato and onion.
Totally yummy and filling! :)

Really easy Emsie - instant potato (I used tesco value), paprika and fresh lemon thyme, mixed well, dip chicken in egg and then into the smash mixture. Cook for about 25 mins, then top with a bit of cheese and pop back in oven for another 5 mins

At the risk of sounding very stupid just checking do I add water to the potato or use it dry? :eek:
