I had to share tonights fakeaway.

Salt and chilli pepper chips, egg fried rice made in the actifry and chicken curry.

6syns for the mayflower curry sauce and used 1tspb oil as healthy extra.

Amazing!! Not much superfree so this will def be a n occasional treat x
 
Pete’s Steak & Ale (2014)

Serves 4

Ingredients

1 Tbsp. flour (4/4= 1 syn per person)
1 Tbsp. Worcester sauce
1 Tbsp. Tomato puree (s) (sff)
8 Shallots cut in half (s) (sff)
150g Mushrooms, quartered (s) (sff)
200mL Knorr dark beef stock
440mL can of Guinness original (6.5/4=1.625 syns per person)
450g Chuck steak, cut into chunks (ff)
Twig of thyme

Method

Cook the shallots in a frying pan on a low light, sprayed with frylight, for about 15 mins to allow going golden in colour. Set aside.
In the meantime, in a casserole pan, cook the beef to brown it, sprinkle the flour over it & mix well, when browned, remove the meat & set aside.
Deglaze the pan with the Guinness, scraping the base with a wooden spoon, increase the heat & reduce the Guinness by half.
Return the beef back to the pan, with the mushrooms, shallots, stock, thyme, tomato puree, reduce the heat to a simmer, cover & cook on an “Eco” setting (90C) for several hours.
15 Mins before the meal remove from the oven, uncover & check the thickness of the liquid, if to thin increase the heat & keep stirring until it thickened up as the liquid is boiled off. Remove the thyme twig.

That pie looks very nice. I'm thinking of making baked bean bread. Has anyone tried it? Was thinking it would go well with chilli or soup.

Pete’s Baked Bean Curry Loaf -3 (2014)

Serves 4

Ingredients

1 Knorr Curry Flavour pot (2syns/4=0.5 syn per person)
2 Eggs (ff)
120g packet of Sainsbury’s Indian style curry savoury rice (ff)
400g Baked beans (ff)
6” cake tin
S & P

Method

Cook the rice as per the packet instructions, when cooked drain in a sieve.
Preheat the oven to 180C.
Open a tin of baked beans and mix the Knorr flavourpot with them, add the rice & allow to cool, season well.
Mix all together & tip into a 6” cake tin, lined if not non-stick. Cook for 20-25 mins then insert a skewer, if it comes out clean, it’s cooked, if not cook for a few minutes more.
Tip out of the tin & allow to cool, slice with care as it is crumbly!
Tastes lovely hot or cold!

It can be done with curry powder and batchelors savoury rice to keep it syn free and a bit of tomato puree in with the beans makes it really nice.

Pete’s Baked Bean Lasagne-2 (2014)

Serves 2

Ingredients

1 Onion, finely chopped (s) (sff)
1 Beef Oxo cube, crumbled
1 Tsp garlic salt
1 Tbsp. Worcester sauce
2 Tbsp. water
2x 400g baked beans (ff)
4 Lasagne sheets (ff)
60g Strong cheddar, grated (2 Hea/2=1 Hea per person)
250g Lean beef mince (ff)
S & P
*2 Lasagne dishes approx.18cm x 12cm x 4cm

Method

Preheat the oven to 180C.
In a pan, sprayed with frylight, cook the beef until its brown, add onions, garlic salt, Oxo cube, Worcester sauce & the water, mix well then cook for 5 mins.
Add 1 tin of beans & mix.
Place a layer of the mince mix in the bottom of each dish followed by a layer of the lasagne sheet, then another layer of mince mix, top up with baked beans as required.
Sprinkle with the cheddar & cook for 20-25 mins.

Pebbles 67 - how do you make your sweet corn fritters.?

SWEETCORN FRITTERS ( from Sam c recipe )

Makes 7 ! Blooming typical its an odd number, so they work out at 2 syns for the lot. (0.285 syns for 1, I had 4 so = 1.14 syns I counted it as 1.5)

2 eggs
2 cups of sweetcorn defrosted
1 tsp Thai spice
1/2 tsp chilli powder
1 small onion chopped finely
2 tbsp finely chopped coriander
1 tbsp lime juice
2 tsp of plain flour ( this is where the 2 syns come from)
Salt and pepper to season

Mix all ingredients in a bowl, roughly blend with hand blender
Spray a frying pan with frylight
Spoon some of the mixture on e pan as if you were making small pancakes.
Flip over when ready .
Gorgeous.
