Quorn Fillets with Philly Mash (Core)

Creamy Quorn Fillets served on Philly Mash (CORE)

Serves 2


4 quorn fillets
1 red pepper, chopped
cooking spray
1 tin of campbells reduced fat condensed mushroom soup
1 Italian stock cube, dissolved in a little hot water
2 large potatoes, cooked and ready for mashing
1/2 tub plain extra light philly
Some milk

Fry the Quorn fillets in cooking spray with the red pepper until golden. Add the mushroom and the stock cube. Blend and allow to heat through.


Take off the heat.

Whip the potatoes with an electric whisk until creamy. Add the philly and enough milk to get the consistency you prefer, salt pepper and herbs if wanted


Served with steamed broccoli

6 ½ points per serving.

For a meat version use 1 chicken breast per person. for a points value of 8 per serving. If a corer you can use chicken breast no problem as skinless chicken is Core.
