Im going to make this Celeriac and Pear Soup later on today, as long as you use frylight spray instead of oil, i make it 0 POINTS!

Never tried celeriac before so not sure if i will like, but will let you know :)

Then for tonights dinner, im going to try this Light Chicken Korma, ive worked it out as 8 points per serving (not inc rice)
When pointing it up i couldnt believe how many points are in the sultanas! There is only 12 points in the whole recipe for the chicken breasts but 10 for the sultana's so might remove from my portion! But it has good ratings so fingers crossed that its going to be yummy. I am going to use some of my 49 weeklies and have giant portion!

Chicken Tikka Masala Lisa Style :)

Chicken breasts thinly chopped 560g 13pp 1 tbls Philli extra light 1pp 100g basmati rice 10pp 2 red peppers 0pp 300 - 500g of any chopped 0pp veg (today I only had mushrooms) 2 Chopped green apples 0pp 1 tbls tomato purée 0pp 3 tbls rice vinegar 0pp 2 tbls low fat soy sauce 0pp 1 oxo chicken stock 0pp Tikka powder 0pp 3 cloves of garlic 0pp Fry Light 0pp Bunch of fresh coriander 0pp Salt and pepper to taste

24pp / 3 portions @ 8pp each

1. Boil red peppers in chicken stock
2. Chop chicken and veg into thin pieces. I only had mushrooms today but you could substitute or add in whatever veg you like.
3. Fry chicken in fry light
4. Add the dry ingredients and stir well- garlic, salt and pepper and tikka powder. I just shove about half a tub of tikka powder into it and don't measure. It should make a sticky sort of paste.
5. Add the rest of your veg and your apples and stir.
6. Remove peppers from the heat and blend in a blender with a small bit of the chicken stock.
7. Add the pepper mix and rest of chicken stock to the chicken and veg.
8. Add the wet ingredients - tomato purée, vinegar, soy sauce and stir.
9. Add the rice and leave to reduce for about 10mins.
10. Stir in the Philli and chopped coriander.
11. Serve :)

My fav one this week was Salmon kedgeree serves 4

Ingredients -
Fry light
1 onion sliced
2 tablespoons of curry powder (2pp)
275g long grain rice (21pp)
300ml veg stock (1pp)
425g of red salmon drained with juice reserved (12pp)
Juice of a lemon
3 tablespoons of fresh parsley
2 hard boiled egg peeled and chopped (optional) (4pp)
Salt and pepper

Method
Heat a large non stick pan or wok and steam fry the onion for 5 mins or until soft.
Add curry powder and cook for 30 seconds
Stir in the rice (pre cook this or it goes harder), the stock and the salmon juice.
Season with the pepper and salt and cover and simmer for 3 mins.
Stir in the salmon and lemon juice and heat through.
Scatter over the lemon and parsley and chopped egg if using. Serve at once.

If this helps discover people it was 24.5 for the whole recipe with egg and 21.5 without.

I worked its pp out to be 40pp for the whole lot so 10pp per serving.

Cheesy mushroom risotto for one person ( just double for 2 hee hee)

100g dry risotto rice
all the mushrooms! I use half a punnet of regular and half chesnut
50g extra light philidelphia cheese
chicken or veg stock cube
garlic
onions
30g ww dairy spread

chop all the mushrooms and boil them in water with the stock cube
chop garlic and onions nice and small and fry then for a minute in the ww spread
add the rice dry to the pan and coat with the dairy spread (keep it movin or it will stick)
Then start addin in the stock laddle at a time and keep stiring
keep doin this till the rice is cooked
finish by addin in the drained mushrooms and the philli and stir till all the cheese has disolved


i pointed this as 11 propoints

Hi i am thinking what should i make today for dinner,and i found this recipe :
‘CREAM’ OF MUSHROOM SOUP
Ingredients
2 avocados, peeled and pitted
juice of 1/2 grapefruit
1 clove garlic
2 cups hot water
1 Tbs coconut oil
1 cup mushrooms, sliced
1 red sweet pepper, diced
1/4 small yellow onion, finely minced
2 tomatoes, diced
3-4 sprigs fresh basil
Instructions
In a food processor, blend avocado, grapefruit juice, garlic and hot water. Set aside.
Meanwhile, heat a medium pan with tall sides over medium-high heat. Add coconut oil.
Saute mushrooms, sweet pepper, onion, tomato, and basil until they begin to soften.
Add avocado mixture and heat through.
