Sticky Chicken with CousCous

2 chicken breasts
2 tbsp runny honey
3 tbsp dark soy sauce
1tsp chilli powder
1tsp ground ginger

Place chicken breasts in casserole dish and slosh over honey and soy sauce. Add chilli and ginger and stir. Bake at 200C for 20 minutes and serve with vegetable couscous (I normally put fried onions, peppers and mushrooms in mine, along with a veg stock cube).
 
Spaghetti Carbonara

Serves 4
1 syn on original (add 6 if not using Spaghetti as HE)
3 syns on green

Ingredients
4 rashers of trimmed bacon
3 eggs
salt and fresh ground black pepper
3 tbsp low fat fromage frais
2 level tbsp grated parmesan
small bunch of chives
14oz cooked wholemeal spaghetti

1) Roughly chop bacon and dry fry in non stick pan for 2-3 mins. Set aside.
2) Lightly beat the eggs, season to taste and add fromage frais and 1 tbsp of parmesan. Chop chives and add to mixture, reserving some for garnish.
3) Add spaghetti and egg mixture to the bacon and stir gently over a low heat until egg starts to set.
4) Serve sprinkled with the remaining parmesan and chives.

This is one of my favourite quick meals and it tastes lovely....yummeh!!

Thank you very much for this lovely recipe. I made it for supper and it tasted really good. I don't like heavy cheesey sauces, so this was perfect.
 
I've just put this on the main board as an answer to someone but here it is for the recipe sticky.

This recipe is fab if you like spicy things. It's from an old WW cookbook.
Nasi Goreng (Green day)
Serves 4
1 egg beaten
3 tbsp light soy sauce
2 tsp oil (or use frylight here)
350g extra lean minced beef or quorn mince
2 garlic cloves, crushed
1 fresh red chilli, deseeded & chopped
1 small green pepper, deseeded & chopped
2 tsp curry powder
1 tsp paprika
4 spring onions, sliced
200g Thai jasmine or basmati rice
600ml stock, any sort
2 tbsp tomato puree
salt & pepper

Beat egg with 2 tsp soy sauce. Heat half tsp oil (or frylight) in a small frying pan and when hot, add the egg and cook to make a flat, firm omelette. Remove and roll up and cut into strips. Set aside.

In a large pan or wok, heat the remaining oil. Brown the mince. Then stir in the garlic, chilli and green pepper.

Cook for 3 minutes then add the curry powder and paprika. Cook for 1 minute and then add 3/4's of the spring onions, the rice, stock, tomato puree, remaining soy sauce and seasoning.

Bring to the boil, stirring, then cover and cook very gently for 12 mins without lifting the lid. Remove from the heat and leave, covered for 5 mins.

Fork the rice gently and serve onto 4 plates. Garnish with the egg strips and the remaining spring onions.

Freezing recommended.


For a Green day it would be 1 HEB and 1.5 syns per serving if using the oil and minced beef.

Omit the oil and it will be 1 HEB and 0.5 syns and if you use quorn mince instead of minced beef it will be just the 0.5 syns per serving.
 
coronation chicken jackets

Got this of a relative and was really nice, dunno about the syns thou?

Coronation Chicken Jackets
Serves 4.
4 large baking potatoes
2 skinless chicken breast
1 red pepper
1 ripe mango
1 lime
3 spring onions
a handful of coriander leaves
2 level tbsp mango chutney
2 tsp curry powder
7oz / 198g vlf fromage frais
6 level tbsp extra light mayo
Salt n pepper
1/ preheat oven 200c/400f, prick potatoes and bake 45-50 mins
2/ grill chicken 8-10 mins on each side or until cooked through deseed and cut pepper into cubes, peel stone and dice the mangograte zest of lime, then cut in half and squeeze out juice, finely slicespring onion, chop coriander.once the chicken is cooled cut into bite sizes
3/ mix in the chicken and prepare ingredients, season well.add chutney, curry powder, fromage frais and mayo, stir well.cover and chill till required.
 
Thanks for these receipes sound much nicer than boring stuff in the books. Here's one I tried earlier yesterday.
Stir fry pork with chilli and pineapple
4 pieces of lean pork (chop size)
2 cloves of garlic
1/2 fresh pineapple
1/2 fresh red chilli
tsp cornflour
spalsh of dry sherry *could leave this out
soy sauce to taste
Bag of crunchy style salad.

Mix together finely cut strips of pork, cornflour soy sauce (lots) and splash of sherry.
Crush garlic and stir fry with fry light for a couple of mins. Add chilli and stir fry.
Add pork mixture and stiry fry till pork is nearly cookded
Throw in bag of mixed salad (crunchy style) and add 1/2 fresh chopped pineapple
Stir fry a couple of minutes, add chopped fresh coriander.
( Great for an original day and with lots of veg you dont need anything else - about 1 syn on orginal and actually tasty!)

Starting to lose more weight this week but not peeking and cheating until weigh in on Sunday!

Has anyone a receipe for a cheesecake (pref baked using quark and cottage cheeese?

Ingredients.

Water.
Feta cheese (14g per serving)

Chop the red pepper and the sweet red pepper up and place into a pan. Add the tomatoes fill the pan with water until 3/4 full. Crumble in the oxo cube and season with S and P.
Bring to the boil and then simmer for about 20 mins. Until the veg is soft.
Remove from the heat and allow to cool. Then blitz with a hand blender until smooth.
Return to the heat and heat throughly, serve in a bowl with 14g of feta cheese crumbled on top and lashings of salt and black pepper.

I've also made this with BNsq and chilli flakes. I've added carrots, onions etc. You really can use any veg that you have lying around.
I love the creamy taste the feta cheese gives it as it melts into the soup.

Chocolate and carribean coconut cakes.

I made these by mistake but they are so yummy, i just had to share and 3 cakes = 1 syn!! on a green day.

Ingredients.
50g of cous cous. (free)
50g of polenta/cornmeal. (free)
2 egg whites. (free)
10 tbsp of sweetner - yes i have a sweet tooth! (free)
2x sachets of options (carribean coconut.) (4 syns)

Method.
Pour 50g of cous cous into a bowl and add boiling water. Just enough to cover the cous cous and have an excess of 1 cm. Add 1 of the options sachets to the cous cous. Then place a plate on top and leave for 5 minutes to fluff up.
Whisk up the 2 egg whites until stiff.
Add the egg whites to the cous cous and stir.
Add the polenta to the cous cous and stir.
Add the sweetner one tbsp at a time and the other options sachet.
Stir until it is all mixed in.
Spray a cake/muffin tin with spray light and a 1 spoon of cake mixture to each one.
This mixture makes approx 12 cakes.
Bake in the oven for about 10 minutes. (180 degrees.)
They taste great when first out of the oven and still warm.

Bacon and sweet red pepper quiche.

Ingredients.
1 sweet red pepper.
1 red onion.
Smoked bacon. - i use more if on a red or EE day, less if on a green.
2 tubs of Asda's red pepper good for you cottage cheese.
3 eggs.
HE A of cheese.

Method:
Chop the onion and sweet red pepper.
Cut off all the fat from the bacon, chop into biggish chunks and fry in the pan with the pepper and onion until cooked.
You may need to add some extra water to stop it from sticking to the pan.
Blitz the 2 tubs of cottage cheese and the eggs in the blender until smooth.
Pour the eggs and cottage cheese mixture into a large casserole dish. Add the bacon and peppers and stir.
Cover with grated cheese and bake in the oven until firm. (approx 180 degrees for 30 minutes)

Tastes great hot and cold.

Other varieties include:
Smoked ham and mushroom.
Smoked ham and tomato.
Spring onion - with cheese and chive cottage cheese.

Mushroom soup.

This is a family recipe passed down from generation to generation in our family, but it tatses too nice not to share. And it's great on an EE day as it's totally free.

Ingredients.
1x large punnet of mushrooms.
1x onion.
Potatoes (I normally use 3 medium ones.)
Smoked bacon (I normally use at least one pack.)
2x beef oxo cubes.
S and P.

Method:
Chop up the mushrooms, onion and potatoes and place in a large pan. Remove all the fat from the bacon and add it to the pan. Cover with water and add the oxo cubes. Bring to the boil then simmer until the potatoes are cooked.
Blitz with a hand blender until smooth. Season with S and P and serve with a toasted crusty roll - mmmm! Great on a winters day.

* I just alter the quantities of potatoes/bacon to fit either a red or green day and it still tastes great.
This will serve at least 8 people.
 
Make your own sausages..............low/no syns for red or ee days...

TURKEY & SAGE SAUSAGES
1 pack minced turkey
1 small onion grated
salt & pepper
fresh or dried sage to taste

BEEF & MUSTARD SAUSAGES
1 pack minced lean beef
1 small onion grated
salt & pepper
3 teaspoons whole grain mustard (syns)

LAMB & MINT SAUSAGES
1 pack minced lean lamb
4 teaspoons mint sauce
salt & pepper
½ teaspoon ground cumin

PORK & BEEF SAUSAGES
1 pack minced lean beef
1 pack minced lean pork
1 small onion grated
salt & pepper

PORK & APPLE SAUSAGES
1 pack minced lean pork
1 small onion grated
1 eating apple, grated
salt & pepper
fresh or dried sage to taste



Blend all ingredients together ( best done in a food processor for a finer result)
Form into sausage shapes, can be frozen.
 
Bangers & Hash

2 Morrisons Eat Smart Sausages, cut into 1 cm pieces (or use Quorn sausages)
2 Rashers Lean Bacon, diced
1/2 Onion, sliced
Garlic clove, crushed
Seasoning
New Potatoes, cooked and cubed
2 Tomatoes, chopped
100g Mushrooms, Quartered
frylight
1 Egg

Fry off sausages, bacon, onion, garlic for 5-6 mins. Add mushrooms and cook for futher 3-4 mins. Add Tomatoes and Potatoes and fry for 3-4 mins. Season to taste and serve with fried egg on top
 
I love this recipe......great for extra easy.

Spicy Sausage Spaghetti

Serves 4


frylight
8 Morrisons Eat Smart sausages or quorn sausages

150g button mushrooms, halved if large
2 garlic cloves, sliced
½ tsp chilli flakes
1 tsp sugar or sweetener
1 tsp dried oregano
680g passata
spaghetti or other pasta


Skin the sausages, cut each into 4 and roll it into a ball. Heat a pan and spray with frylight. Cook the sausage balls and remove to a plate. (if using quorn sausages just cut each into 4 pieces)


Add the mushrooms and garlic to the pan and cook for 5 mins. Add the chilli, sugar or sweetener and passata, stir and simmer for 10 mins.

Return the sausages, stir and cook for another 10 mins, until the sauce has reduced. Season to taste.

Cook the spaghetti as directed on the pack, serve the sauce over it.


This is also nice with couscous, rice or jacket potato.

Which is the best way to cook the sausages - oven, grill, or fry?
And do they keep their shape while cooking? They sound yummy, especially the lamb and mint ones. I just need some nice weather and BBQ here i come!

Red Day:-

2 Bowyers sausages (1 syn each)
2 slices nimble bread
1 egg beaten
Cocktail sticks


Use a rolling pin to roll the bread until it's thin.

Wrap the bread around the sausage and secure with cocktail sticks

Brush the bread with some beaten egg

Bake in an oven at 180 degrees for about 20 mins until golden and cooked through.

2 Syns on Red. Add 6 syns if not using the bread as a HEX

Green Day

The same as above but use Quorn sausages instead. Free on green. Add 6 syns if not using bread as a HEX.

Just found this, it's cooking as we speak, oh be home late and need a snack to keep me going, Genius spaceangel!
