This recipe can be made in lots of ways, but the main ingredient is as many super free veg as you can squeeze in, and always add the tin of cannellini beans in which are H SS F. You can also blend half of the mixture and have as a chunky soup without the pasta, so its very versatile!!

    Ingredients (are a guideline)

    Serves 4

    1 Lrg onion diced
    3 Courgettes halved and diced
1 Lrg Celery stick halved lengthways and diced chunky
    7 Mushrooms chunky diced
    brocolli cut up chunky
    Red pepper diced chunky
    Tin chopped mushroom
4 Tbsp tomatoe purée (1/2 syn pp)
    1/2 pint vegetable stock
    generous salt and pepper
    3 Garlic cloves crushed
    1 tsp Marjoram
    1 tsp Oregano

4 x Lean Pork fillets all signs of fat trimmed off, season how you like it and grill or oven cook to cook
10g per person apple, apricot and ginger Geo organic chutney (1/2 syn pp) put this on the fillet about 5 mins before the end of the meat cooking time. I found this chutney in a health food store, they dont put rubbish in the ingredients, and its very low in sins and great on meat!

200g pasta shapes cooked and put to one side until you need it.

Very easy! Just shove it all into a big massive pot, bring to the boil for approx 15, then simmer on a medium heat for 30 mins, then add the cooked pasta and warm through.

    Very filling tasty and healthy!
