Summer Chicken and Basil Stew

I've just made this for tea - it is absolutely delicious and very easy to cook too. My family had crusty bread with it so you could use a hexb wholemeal roll to mop up all the yummy juices x

Serves 4 - 2.5 syns per serving

Ingredients

8 skinless chicken thighs - all fat removed
1 tbsp plain flour, seasoned (3 1/2 syns)
12 new potatoes, halved
2 red peppers, diced
handful of basil leaves
200ml chicken stock
150ml white wine (6 syns)


Spray a large frying pan with frylight. Dust the chicken in the seasoned flour, and fry over a high heat, turning once, until chicken is brown.

Add potatoes and peppers to pan, and cook for 3 minutes.

Add stock and wine, season with salt and pepper, cover and cook for 20-25 mins until chicken is cooked. Add basil to pan and cook for 5 mins more. Enjoy!
 
Wow that looks lovely I will be sure that I give this one ago! I'm always on the look out for nice soup/stew recipes. So 9 and 1/2 syns a serving is it?

SarahJane, it's 9.5 syns for the whole thing, so 2.5 syns per serving (it serves 4)
 
oh yes! I just spotted that just before i scrolled down to your post! Not very observant this evening it seems! 2 1/2- that's much better :D can't wait to make it. xx
