SuperFree Shepherd's Pie (Free on any day)

I made this last night and it was gorgeous! (sorry, no pics!)

Throw the following into a pan sprayed with frylight:
  • red onion, chopped
  • pepper (any colour), chopped
  • mushrooms, chopped
  • carrot, chopped
  • celery, chopped
  • courgette, chopped
  • 1/2 red chili, chopped
  • packet of Quorn mince
Saute for about 10 mins. Add:
  • tin of tomatoes with garlic
  • a few splashes of creamed tomatoes (about 1/2 carton) or passata
  • palmful of dried oregano, fennel seeds & dried marjoram
  • good sprinkling of garlic salt & pepper
  • few shakes of dried red chilli flakes
  • good few glugs of worcester sauce
Saute for another 10 mins. In the meantime chop up 1/2 a swede and a butternut squash. Boil for about 10 mins or until tender. Mash with a tub of Total 0%, fresh parsley and some garlic salt.

Spread Quorn mixture into lasagne or large dish. Top with squash mash and sprinkle with Parmesan (taken from your HEX A or B) and freshly ground black pepper.

Pop under the grill for about 10 mins or until golden.

I was actually pleased with how it turned out. My friend was impressed and I had warned him that it might be crap as it was Quorn!!
