Sweet potato, potato and carrot - recipes please!

Hi all, I got LOADS of carrots, sweet potato and carrots reduced at the supermarket and am looking to cook them into something that can be frozen as its way, way too much for me to eat now and they will go off before I get round to it.

not looking to use all of them in 1 dish, but any way to preserve them.

I'm vegan so no meat/quorn, although any recipes are welcome as I can get ideas off them.

I'm following green so don't worry about sp/ee ideas...

I just made a curry with sweet potato, carrot, mushroom, onion, garlic, leeks, 20grams pataks balti paste (3syns), 5gms coconut powder(2 syns), veg stock. Ate the lot with rice. Was starving lol. Delicious!!!
