I didnt know there was a meet so soon lol. If I knew sooner I could have arranged something etc but Manchester is abit far for me unfortuntely.
I've not been doing EESP all the time. My consultant said it is okay to do one week of it every so often but she recommended sticking with EE or doing a few SP days in between EE days so that's what im doing.
I think 2-3 days will do me good as I do sometimes get bloated from eating alot of carbs. Doing a couple at the end of my week should help xx
 
Today's food on EESP

Breakfast wrap
egg, bacon, mushrooms, baked beans, tomatoes.

Tonight's Extra Easy SP Dinner
Chili Cup with salad & 40g low fat cheese (HEA). Used WW wrap for 4.5 syns or you could use a BFree wrap as your HEB choice.

Snacks:
1 hifi bar (HEB), 1 Alpen light bar (HEB)

Total syns: 4.5 for ww wrap, 3.5 for skinny cow mini lolly and 3 syns for half a can of lager. xxx
 
Congratulations on your loss! I weigh in on Friday and not feeling too hopefull this week for some reason. I know it won't be anywhere near the 5.5lb loss from last week, but really hope I can get something! Hw exciting you have a holiday to aim for, where are you going? X

Day One: Extra Easy SP Day

Breakfast:
2 weetabix (HEB), 300ml 1% fat milk (HEA), Clementines.

Lunch:
Speed: lettuce, cucumber, tomato, red onion.
Protein: Ham slices, Asda onion & chive cottage cheese.
Syns: 1 Babybel Light (2 syns).

Dinner:
Chinese Stir Fry

Chicken, mushrooms, onions, peppers, red chilli, cabbage, beansprouts, carrot, bamboo shoots. 15g of Sharwoods prawn crackers (4 syns), 11g dry weight of Mayflower curry sauce (2 syns).

Snack:
Fresh clementines, Apple & melon served with Quark mixed with sweetener & vanilla essence. 1 Alpen light bar (HEB & speed food if having one).

Today I have had 8 syns.

I also made these earlier as a lovely protein snack on SP.

Egg & Bacon Balls
These are a syn free version of scotch eggs with a twist & great if doing Extra Easy SP too as they are full of protein.

I made them by boiling 3 eggs in a pan for 15 minutes. Once cooked peel the shells & leave to one side. Bind together around 100g of 5% fat beef or pork mince in a bowl & bind until smooth, I added 1 tbsp of Hellmanns lighter than light mayo (1 syns) to mine & a sprinkle of salt & pepper. Stops the mince from drying out once cooked. Then bind the mince around each egg carefully into beat round balls. I then cut up 3 pieces of back bacon into strips & wrapped them nearly around each egg/mince ball. spray with frylight and put on a baking tray. Oven cook for 15-20 minutes on gas mark 7 or until browned off.

I made the egg and bacon balls a few weeks ago and they were amazing but seeing yours has inspired me to make them again today. I can't wait to eat lunch:)

How exciting about going to Egypt, I've never been but have always wanted to. Great weather all year round too!
We decided on Corfu this year in September which I'm excited for :) xx
 
Hoping to find more inspiration for food ideas...loving what I'm seeing so far. I really want to get back onto track now and get to my target (more or less) for holiday in May, I've done well the last 2 weeks losing 8.5 lbs altogether. But I do SW online and on my own at home so decided to join up here for some extra ideas/support :)

Probably be Egypt for us again too after loving it last year! Sure you will love the Sensatori. Had 2 lots of separate friends go last year and love it so much they are both going back this year again!

I've made a couple of recipes tonight so here they are.
I suffer with terrible insomnia which has been brought on by a stomach problem I am waiting to go to hospital for. I have basically got constant heartburn/acid reflux and chest pains but I am worse at night. Can't wait to get fixed up as I have had it for nearly a year now. xxx

Syn Free Creamy Tomato & Butternut Squash Soup.
Suitable on Extra Easy SP too.
Full of flavour & will last me the weekend.

Ingredients:
1 tin of chopped tomatoes (S)
250g passata (S)
Half a butternut squash, cut into small pieces (S)
250ml of chicken/vegetable Oxo stock
25g of red lentils (P)
Two tablespoons of Quark (P)
Salt & Pepper.

Method:
Place all the ingredients apart from the Quark into a large pan.
Add abit of salt & pepper. Cook for around 20-30 minutes until everything is nice & soft. Once ready stir in the two tablespoons of Quark & blitz using a hand blender.

Mini Oreo Cheesecakes for 3 syns each.

Lunch:
Creamy Tomato & Butternut Squash Soup & a egg & bacon ball. All on Extra Easy SP.

Chicken Burger & Chips for 8 syns.
Birds Eye chicken burger (4.5 syns), 1 tbsp of Hellmanns lighter than light mayo (0.5 syns), 2 slices Asda lighter cheese (HEA), 60g wholemeal cob (HEB), fresh salad & 200g of McCains 5% fat oven chips for 3 syns.
