Tikka Masala Sauce

Bought a Cuisinart Soup Maker today and this curry sauce recipe was in the book that came with it - so easy, and really really authentic tasting!

2tbsp vegetable oil (or Frylight)
1 large onion, quartered
4cm piece of fresh root ginger, peeled
2 cloves garlic, peeled and finely chopped
2 tsp garam masala
1-2 tsp chilli powder
1 tsp turmeric
1 tbsp tomato puree
150ml chicken stock
400g chopped tomatoes

1. Saute onion in frylight until slightly softened.
2. Add ginger and garlic and heat until softened, stirring frequently
3. Add garam masala, chilli powder, turmeric and cook for a short time, stirring frequently
4. Add tomato puree and stir through (this makes the flavour more mellow and rounded) , then add the stock, tomatoes, and some seasoning and simmer until heated through
5. Blend in blender til smooth


For chicken tikka masala:
Roughly chop 4 chicken breasts and heat with frylight in a pan until starting to brown, Add sauce and simmer for 20 mins until chicken thoroughly cooked. Stir in 5tbsp of VLF yogurt and a handful of chopped fresh coriander and warm through gently for 1-2 minutes. Check seasoning and serve with pilau rice.

Just need to re-stock on turmeric and garam masala.
