Turkey and ginger stir-fry 229 calories 2.4g fat per serving

Serves 4

450g turkey fillets cut into strips
1 red onion finely sliced
1 red pepper seeded and sliced
2 small courgettes sliced
115g mushrooms sliced (chestnut mushrooms have more flavour than ordinary common ones)
2cm piece of fresh ginger peeled and finely chopped
1 tbsp light soy sauce
1 tbsp runny honey or mango chutney
2 teaspoons chilli sauce

Heat a non-stick wok or frying pan and add the turkey strips. Dry fry for 5 - 6 mins or until the turkey is just cooked. Remove from the pan and set aside.
Return the pan to the heat and add the onion, red pepper and courgettes and dry fry for 2 - 3 mins. Add the mushrooms and ginger stirring well.
Return the turkey to the pan and continue cooking for 2 - 3 mins, stirring constantly.
Mix together the soy sauce, honey and chilli and add to the pan coating the meat and vegetables. Stir fry until the meat is fully cooked.
Serve on a bed of noodle or rice. (calories extra)
