Made these tonight and they were gorgeous!!

1/4 grated white cabbage
2 grated carrots
1 grated onion
(I zapped them in the food processor)
salt and pepper
garlic powder
2 eggs

Mixed all the ingredients and make into little patties and fry in the frying pan with a little oil (wiped). Carefully turn them over in the pan after a few minutes, the egg should help to bind them together.
 
Hmmm I love potato rosti so this could be a good alternative. |I've used courgette and carrott in the past.

I suppose you could use whatever veggies you like, i had these left over from making coleslaw, i have never made them before, i need some of those ring things you put in the pan to keep them together
 
I used to just chuck it all in the pan or on the grill (forman type) and then slice into pieces when done. In the pan you have to cook it slowly and longer so it all holds together when flipping it over lOL.
