Whats for tea tonight?

I am makig a cottage pie have put a tin of lentils and a tin of baked beans in too and some veg just got to put in all together and in the oven for a bit cant wait am starving lol been at work all day :-(

Slimming World - Mexican Bake

Serves 1
Ready in about 35 minutes
Green FREE Extra Easy FREE
Add 5 and half syns if not using the reduced fat cheddar cheese as a healthy extra

Ingredients
7oz/198g potatoes, peeled and cut into bite-size chunks
1 tomato, roughly chopped
1 small red onion, roughly chopped
2 garlic cloves, crushed
1 small red pepper, deseeded and finely chopped
7fl oz/198ml passata
1 tsp groun cumin
half a teaspoon dried oregano
A handful of fresh coriander, chopped, reserve some to garnish
Salt and Freshly ground black pepper
42g reduced fat cheddar cheese, grated
Crisp green salad, to serve

Method
1. Preheat your oven to 180c/350f/Gas 4. Boil the cubed potatoes for 5-6 minutes, then drain and set aside.

2. Meanwhile, place the tomato, onion, garlic, pepper and passata in a pan with the cumin oregano and most of the coriander. Bring to the boil, season to taste, and then reduce the heat to low and cook for 5-6 minutes. Remove from heat, stir in the potatoes and transfer to an ovenproof dish.

3. Sprinkle over the cheese and cook in the oven for 15-20 minutes or until golden and bubbling. Garnish with the remaining coriander and finish with a twist of black pepper. Serve with a crisp green salad.
 
Tandoori chicken breasts, large salad, pitta hexb, jacket potato hexb chips. Flipping gorgeous ;) could eat it again!

Are the burgers free from Joes? In fact is everything free? I've only had sausages x

Hi yes everything is free :) burgers only come in a two pack so I only bought one but they were good! Had the beef grills (not tried them yet) sausages and the different marinated meats :)

I've had the grills too, they're filling, nice hot or cold for summer BBQ. I need run freezer down to re stock! Not cheap though.

Pork and apple burgers are my favourites - and their sausage meat make yummy scotch eggs!!

Not tried the sausage meat yet ... I want to make scotch eggs with it but husband chicken cake.. I'm thinking the latter is maybe meat overload for me lol x

oooh that sounds LUSH!!! will try that this week, i wonder if it would work with feta cheese? i love feta, and i can use 50g as a hexa, which i did the other day, when i weighed it on my digital scales i couldnt believe there was so much there!
[unless my scales were wrong! but theyre brand new!:p

thanks for the link, im going to make that this week and take some to work

my chilli was gorgeous:D:D:D
