Had one of my favourite off plan dishes tonight, but adapted it to make it syn free.

Marinated lime & ginger chicken with seasoned wedges.

Marinade:
The zest of 1 or 2 limes (depending on taste, I used 2)
The juice from 2 or 3 (I used 3) limes
3 teaspoons of ground ginger
3 teaspoons of corriander
2 teaspoons of crushed chillies
1 teaspoon of smoked paprika
2 chopped/crushed garlic cloves
1/4 cup water for syn free or 1/4 rapeseed oil.for syns.
Whole skinless, boneless chicken breasts.
Sit them in the marinade for 3 hours before cooking them (in the marinade) at 170°c in fan oven. I always guesstimate timing.

Syn free chips, boiled & prepped, sprinkle smoked paprika, corriander, ginger, black pepper & garlic salt on them before spraying with fry lite & oven baking.

I served with cottage cheese & iceland country mix veg, steamed.

Jacket potato with cottage cheese, 2 x HEA of grated cheese and salad.

chicken breast and half a packet of savoury rice adding extra mushrooms and a salad, followed by melon I think. Simple but I've had a busy day and don't want to 'faff' about too much

Witches Brew Stew! Sounds more exciting than it is lol!

It's a butternut & minced beef stew with cannellini beans & spinach.
