I love the idea of minced turkey, thank you! I suppose minced extra lean pork would work too.

The loaded potato skins I made last night for dinner were absolutely delicious! I used quark with a little fromage frais to loosen it and it was really close to sour cream. The skins are 1.5 syns each and totally worth it. The recipe makes 8 potato halves:


  • 4 baking potatoes, oven-baked and cooled
  • 8 slices bacon, all fat removed, cut and fried until crispy
  • 250 g pot of quark
  • 2 tbsp fat free fromage frais
  • 40 g grated parmesan (12 syns)
  • 6 spring onions, chopped
  • Parsley, chopped
  • Salt and pepper

  • Scoop out the potato and set aside the middles (can be used for fishcakes or mash).
  • Spray with frylight and sprinkle with salt and pepper. Return to the oven until crispy.
  • Sprinkle in the bacon pieces and top with the parmesan. Grill until golden and crispy.
  • Mix together quark, fromage frais and parsley and season.
  • Top the halves with the mixture and sprinkle chopped spring onion. Serve straight away
 
I make something similar to this, but I mash the scooped out middle with laughing cow light, add chopped onion and bacon or ham, and top with a little grated cheese! Lush with BBQ sauce for dipping, or drizzled over the top! Xxx

Sounds delicious too though i've never had laughing cow cheese - is it like dairylea?

And if you use your cheese as your HXA then you could make then Syn free :)

After putting a bit on I want 18lbs off by Xmas although I might call target before that...1st mini target is to get my elusive 7 stone award xx
