Yummy homemade soup

This soup can be used on EE and Green day (1xHEXB). My mum made this and it is delish. Also very good for people with limited budget. It makes a lot so you can share or freeze for later.

Ingredients:

You can put in any leftover veg you have handy - stalks, leaves...

1 large onion diced finely
3 Carrots dice finely
Cauliflowers diced finely (stalk peeled and diced)
2 small potatoes peeed and diced
2 stalks of celery
Parsely, corinader, spring onion, spinach (we kept the leaves and diced/chopped al the stalks)
2 tbsp dried rice (this acts as gravey and thickens the soup)
5-10 dried chick peas
5-10 dried Black eyed beans
5-10 Pinto beans
5-10 dried harricot beans
1 tbsp dried Green lentil
2 pints water
Salt & pepper
3-4 oz lamb (you can use chicken, beef or anything you fancy)

Put all ingrediaents together, add water, salt & pepper. Bring to boil and then reduce heat and let it cook until all pulses are cooked. Stir the soup from time to time so it does not stick to the pan. Add more water if needed. It goes nice and yummy after about 1-1.5 hours.

Serve hot. Can put some creme fraiche or FF youghrt or Lemon juice on top to make it taste different. I prefer it as it is.

Just had a large bowl for dinner. It tastes much nicer the day asfter it is cooked. Let me know how yours turn out.

Sounds yum is the contents just for one portion

It made 4 portions for us. Each bowl was full. Mind we added much more veg. You can add more or less ingredients. You can see when it is cooking if it is enough or not. If it is too much you can keep for later. Enjoy it.
