I made it yesterday but didn't have leeks or peas so I used mushrooms and peppers. It was quite nice

I have made this a few times now....

I find it nicest with just a bit less leeks than onions, and by adding all the cheese into the mix, rather than saving some for the top

I will definitely go back to this now and again as a yummy lunch x
