Just wanted to share this.

I only get to eat once a week so it's nice when it's kinda special. Well OH surpassed himself tonight. Because he knows I miss Chinese food, he made a mushroom foo yung with a quorn, ginger and broccoli stir fry. It was amazing. Even though it was a tiny portion compared to what I was used to, it took ages to eat and I felt pretty stuffed.

I knew there was a reason I love him.

Heat a couple of drops of sesame oil and lightly cook the mushrooms (I prefer button mushrooms because of the firmness). The mushrooms produce enough liquid to stop the omelette from sicking too much. Add a couple of eggs directly to the mushrooms, season and mix lightly. Keep folding the mixture with a spatula until it gets to the right texture.

The stir fry is very simple too. Lightly fry the quorn pieces, add brocolli, grated ginger and fresh five spice (make your own as there are too many additives in shop bought ones) - a little low salt soy sauce is good too.
