cinnamon pasta bake

    serves - 4, pp per serving - 6.

    160g dried pasta (16pp)
    3/4 tub of passata (0pp)
    diced green pepper (0pp)
    diced red pepper (0pp)
    chopped red onion (0pp)
    3 cloves of garlic (0pp)
    200g of quorn mince (4pp)
    1 1/2 tsp of cinnamon
    8 cherry tomatoes (0pp)
    80g light mozzarella (4pp)
    splash of water

    in a pan fry off all the veggies and garlic until slightly softened, at the same boil the pasta until half cooked, remove from heat and drain.
    add the passata and cinnamon to cooked veggies and stir through. add the water so it makes a fairly runny sauce. mix the veggie sauce through the pasta and put in an oven proof dish. top with cheese and cherry tomatoes and bake for about 15 mins on gas mark 5 until the cheese has melted and gone golden.

    makes a really big portion and leftovers work well for lunch the next day :)

    sounds like my kind of meal. I've found loads of lovely recipes on here. Trouble is, I want to try them all right now!
