Diary of a bouncing back ww'er

Hubby laid new lino in the kitchen today & I'm really pleased with the result. We decorated but never got round to buying lino so got a really good deal & thought it was too good to miss :)

Fancied something zingy, tangy & tasty today for dinner but didn't know what to have. I hate days like that, sometimes you just don't know what you want!!

Sundried tomato flat bread 4pp filled with ham 2pp salad & free sweet chilli sauce delish!!

Mid afternoon snack

Was wondering if anyone knows the pp's in crumpets. I have access to esource but as there are 2 types of crumpets, (the thick white ones & the thin pancake like ones), I don't know which is which on esource. I bought some from Greggs today but to compare them against another brand is difficult as I don't know which crumpet is which :-s

I use the hovis ones and they are thick white ones and 3pp each - the coop ones the same are 2pp each. I just looked at greggs website to try and get nutritional information but they aren't on there

Thank you for taking the time to check. It's the pancake style ones I've got. I'll maybe just compare them to a large pancake if I can't find any pp's on them.

Scotch pancakes are also 2/3pp so I don't think you will go far wrong pointing at that :)

They have about 100cal in one so 3pp for one, 5pp for two ;) xx

Went shopping today & bought myself 2 cookery books. The Hairy dieters & Jamies 15 minute meals. Having looked at both of them tonight, I am full of new ideas so hopefully, there will be a few creations made over the coming weeks!!
I have already planned the next 3 nights, how organised am I lol!!

Nothing special, just chicken cooked in one of those Maggi bags, the sweet & sour one. It was moist & juicy. Very tasty. 5pp for chicken, 1 for bag & 4pp for spuds

I had 2 crumpets, one after lunch, the other tonight 5pp with jam on both 2pp
Cadbury's hazelnut hot choc 1pp
Walkers sweet chilli stars 3pp

Thursday is ginger, chilli salmon from the Hairy Dieters, Friday is mussels from Jamie & Saturday is the rich beef & ale casserole from the Hairy Dieters. I want them all!!!! xx

Haven't had any of them yet (don't like mussels though) so let me know what they are like. I'm thinking of trying the old fashioned chicken stew but just need to figure out how to adapt it for a slow cooker as will take too long for me to cook during the week.

I like the sound of that one too. Another option is to cook it the night before then you just need to reheat when you come in from work. I often do that when I plan dishes that take hours to cook. I'll be making the steak & ale on Friday as I won't have much time on Saturday as I will be taking the boys out. Just an idea :)

I always get a bit worried reheating chicken. I'm worried I'm going to poison everyone. Would make my life easier if I could do it that way though :) xxx

I've been doing it for years & we're still alive lol. I would never rehear fish, for all the time it takes to cook anyway, it would turn out rubbery but chicken is fine as long as it's heated right the way through. Make it the night before, let it cool, cover refrigerate then when you get in from work pop it into a pot & reheat. Perfect!! :) xx

Ok sorry for a silly question - reheat in the oven? Roughly what temperature and how long for? I have never done it so want to make sure it's right :) xxx

If I'm cooking potatoes to go with my dinner I put my potatoes on to cook then reheat my dish. If its a stew/chilli/mince type dish, I put it in a pot with a lid & reheat very gently giving it the odd stir. Let it simmer until it's hot right through & voila!!
If it's lasagne or something like that which you cannot reheat in a pot I cover the top with tin foil as I don't want the top to burn. It will take approx 30 mins or so in an oven, or you can zap it in a microwave but some dishes I don't like zapped. Does that make sense? I do it without thinking but trying to write it down to make sense to someone else is more difficult xx
