dukan-friendly chicken soup ideas?

I've have cooked 2 whole chickens and don't want to waste the carcasses so I want to make chicken soup!
I've boiled both carcasses (removed as much visible fat as i could before boiling) for a couple of hours in water and left the pot on the stove until tomorrow when I will buy some carrot and celery and make a soup for me to dip in when i get peckish.

Have any experienced Dukaners made something similar? can u offer any advice?

  • what I can add to make it palatable?
  • any other veg I can add?
  • best way to skim off fat?
  • is this even a good idea?

Best way to skim off fat - put the stock in the freezer and let the fat solidify on the top, then scrape it off?

I like to add lemon juice to my chicken broth to sharpen it. Otherwise just salt, black pepper and fresh thyme.
 
As well as the Carrot and celery add some Corriander and if you like it a touch spicy a finely chopped Chilli.
