I made these for lunch and they're yummy!
Suitable for PP or PV day.
1 tin tuna
1 tsp horseradish
1 egg
2 tbsp oatbran
black pepper
Grated lemon rind
Squeeze of lemon juice (not too much or mix will get too soggy)
** N.B. If you like, you can swap the tuna for salmon and add some dill to the mix. A mix of fish is nice and also for a change if you chuck in some finely chopped smoked salmon **
Combine all the ingredients and shape into 2 patties.
Heat a frying pan and spray with fry light. Fry the fishcakes for around 6 mins on either side until golden on the outside and hot in the middle.
I served on a PV day with a side salad
