Hi, just starting out on my low GI diet. Can anyone tell me if the following are ok?

I am trying to avoid dairy for medical reasons so searching for alternatives!

Coconut Milk (I'm not a fan of soya milk and I believe rice milk is not GI friendly)
Alpro Soya Dessert
Spelt & Honey Bread (sugar & wheat free)
Pasta made with spelt flour and eggs

Think that's it for now....

I know that creamed coconut is low GL but I imagine as for any milk, limit the amount used over the course of the day.
Spelt flour is a medium GL food.
I'm not sure about the alpro soya dessert but I imagine it has a sugar content and the amount used should be limited. I tend to use fruit and yoghurt for desserts usually.

That Spelt bread sounds yum - where did u buy it?
 
It is delicious. I think it might be limited to the area I live in (Cavan) as it is made by Cully's Bakery. Lovely and moist with a hint of sweetness.
