Oh my days! The KFC Chicken was amazeballs! The spicy coating was that! Spicy! So if you like a bit of a kick then you have to try this one! I used the following-: Pack of Mini Breast chicken fillets Frylight 1 egg 100g of Smash 1 Oxo Chicken Stock Cube 1 tsp Cumin 1 tsp Cayenne Pepper 1 tsp Garlic Salt 1/4 tsp Mustard Powder 1 tsp Cajun spice 1 tsp Hot Chilli Powder 1 tsp Piri Piri Seasoning Pre-heat the oven to 180. The chicken will take about 320 minutes to cook so bear this in mind with what ever your having with it :) 1) Prep the mini fillets, removing any fat etc from them 2) Beat the egg well in a bowl 3) Add the Smash and all the spices etc to another bowl and mix well with a fork 4) Add some foil to a baking tray and spray well with Frylight 5) Dip each breast one at a time into the egg, then drop into the smash and spice mix, covering as well as you can all over. Then lay each fillet onto the tray. Repeat until all are done. 6) Now spray the chicken fillets again with Frylight and re-top all fillets again with the remaining mixture. Spray with frylight again. 7) Place the tray in the oven for 10 minutes. 8) Remove after 10 minutes turnover. Spray again and sprinkle mixture over that side too and spray frylight again. 9) Replace tray in the oven and cook for another 10 minutes. Serve with Homemade Coleslaw, SW Chips, Salad and a side of beans! YUMMY!!! <img src="http://www.minimins.com/attachment.php?attachmentid=165771"/>

Off to Matalan in a while! It's quite sad that I enjoy clothes shopping now I feel that everything doesn't have to swamp me to hide everything. And I don't have to look for my size right at the back of the hooks anymore! As those you that have read back will know a few weeks ago I sorted out my wardrobe in order to get rid of the big stuff on ebay while I'm off work next week, obviously leaving me not much clothes wise and literally a few things for holiday. So off to have look, maybe pick up a few things for the hols, not too much though cos I hope that I can loose another stone at least before we go in around 14 weeks! Be back later to do today's food diary :)

You'll get there cheekychick! It's a great feeling to come home with what I call 'small' size stuff..lol... I spent a little too much, but have dropped another size in jeans..now a comfortable 14. Got a few more bits for the hols 14,12 and couple of looser fit style tops in a 10 in the sale that fits me now! Have promised myself I'm not buying anything else now until nearer the time we go..lol..

Welcome gem91. Thank-you very much! I have to admit it's getting harder now. I'm being good, but my body seems to be just wanting to hold on to it..lol.. I'm dreading getting on the scales today. Congratulations on your losses too and thanks for subscribing, nice to know I'm not waffling on to myself all the time...lol.. :)
 
So I've weighed in and STS... am a bit disappointed. Yes, it's not a gain. But when you've been good it's still a bit of a kick in the teeth. I'm putting it down to not been at work and not get the walking distances I usually do in.

We're off to Manchester to see The Lion King tomorrow and we're eating out as it's Valentine's Day also. I'll try to make as good choices as I can :)
And next weekend we're off to visit family in Portsmouth, again, I'll try to be as good as I can. Really think I'm going to struggle to get to target for holidays now and I'm thinking about setting myself a mini target of 17lb by the time we go in 13 weeks. My body just don't seem to be wanting to play ball anymore. Anyway...grumble over and back to it I guess :)

Saturday 14th February

So yesterday I was off plan. We had a fantastic time in Manchester going to a lovely Italian restaurant and The Lion King was awesome! I'm not counting syns. just a day off, but I wasn't too bad all things considered.

But boy, did I pay the price! I felt so sick after and my stomach said no thanks and...well I don't think I need to elaborate..lol..

Well, I was feeling very guilty about it all last night (as well as sorry for myself feeling poorly in a strange bed) when I did get up this morning and logged into my FB I'd posted a couple of pics from last night as you do and was blown away by the comments about how well I was doing and how 'slim' I looked. So it gave me a great boost and made me look at things differently, so although I was not going to do it until I was at least on holiday or much nearer my target weight here's my first then and now picture! So now I have something I can see, how I was and how I am. I think it will help me when I feel down on myself or I need to see how far I have come. So here's me...almost 3 stone down :)
