Made from Asda frozen Chicken Style pieces - 3 syns per bag - 3 portions - with peppers and mushrooms.
Potatoes topped with Parmesan Cheese.
 
Did somebody on here say those chicken pieces were vegan or was it I dream? I do often dream of food ;)

As I see it you can have anybodys wholemeal bread - 60gms - as your HEX B and as we make our own bread weigh out the dough and make bread rolls to that amount. Instead of making it all into bread rolls I roll out 1 of the dough balls to make a pizza base so that is one HEX B or double it and have a large pizza for daily allowance of 2 HEX B.
30gms of Cheese is a HEX A so use that as the topping - 1 or 2 A's depending on how much cheese you want.

A member of Minimins had a pizza base accepted by SW which was made from Tesco bread mix but if you look on the packet it has additives we don't put in our bread and as SW accepts anybodys wholemeal bread as HEX B I use my own bread mix for pizza.

ASDA Chicken Style pieces Pie - 2 portions
Into a microwave pan put a chopped onion - a stock cube - tsp garlic - tbsp Engevita (nutritional yeast but not necessary) and cover with water and cook for about 5 mins. This cooks the onion and makes it "syrupy"- keep an eye on the water.
Stir-fry a thinly sliced stick of celery - half a red pepper and some sliced mushrooms.
Add 200gms of the chicken pieces along with the onion mix, salt and pepper and a little more water and cook for a couple of mins.
Mix 2 tsp cornflour with some water and add to the mix and stir and cook out the cornflour - make sure the gravy has thickened - if not turn up the heat a little until it is.

Put into an oven-proof dish and top with mashed potato and cook in oven - about gas 6 - until the top is brown. Everything is cooked so only wants colouring.

These pieces are 1syn for 100gms - 1 syn for 1 tsp cornflour - 1/2 syn for Engevita.

If I have not used HEX A's I put cheese in with potatoes and then grate Parmesan on top.

These Micro Pans are from Lakeland - £4.99 - have had cheaper ones but they have cracked.

Those micro pans are cute! Never though of having a microwave pan lol


They are brilliant - they used to be clear but now this nice red colour and better quality. No messing about with cloths and things as the handles stay cold.

Only me for lasagne so seemed a bit of a waste to make a big one in the oven or even just one.
Saw this in a book using meat but used beans, lentils and veg - cooked pasta on its own then built it up.
Used 100% Greek Yoghurt (but could use cheese sauce) then put cheese on top or use 3 low fat cheese triangles melted
in the microwave with a little milk and pour that on top

Think I going to make the lasagne, it looks delicious
 
It was a great way of making it - next time will put the salad in a separate bowl then I can pop the "lasagne" in the microwave to melt the cheese a little.

Made some egg custard from a recipe on site but it was far too thin so mixed a S.F. Jelly into it and ended up
with a trifle like pud - added some raspberries and yoghurt - very moorish

Where the potato and courgette cakes nice? They look lovely i might try them next week

COURGETTE AND POTATO CAKES FROM DELIA SMITH ---- Only made half of the recipe
Didn't dust them with flour and sprayed them with Frylight so didn't use the butter!!!
Used the cheese that was in the fridge - half feta and half cheddar.

Ingredients
6 medium courgettes (weighing about 1 lb 8 oz/700 g in total)
4 medium Desirée potatoes (weighing about 1 lb 8 oz/700 g in total)
4 tablespoons chopped fresh mint
1 lb (450 g) Feta, crumbled
4 spring onions, finely chopped
2 large eggs, beaten
2 tablespoons plain flour
2 oz (50 g) butter
1 ½ tablespoons olive oil
salt and freshly milled black pepper
You will also need two baking trays, each measuring 10 x 14 inches (25.5 x 35 cm).



First you need to grate the courgettes coarsely – a food processor is good for this – and put them into a colander. Then sprinkle them with 2 level teaspoons of salt to draw out some of their excess moisture and leave them to drain for about an hour, with a plate or bowl underneath to catch the juices.
Meanwhile, scrub the potatoes and place them in a very large saucepan, with a little salt. Pour just enough boiling water over them to cover them, then simmer gently with a lid on for 8 minutes to parboil them. After that, drain them and leave them aside until they’re cool enough to handle. Then peel them and, using the coarse side of a grater, grate them into a large bowl and season with more salt and some freshly milled black pepper.
When the hour is up, rinse the courgettes under cold, running water, squeeze out as much moisture as possible with your hands, then spread them out on a clean tea cloth and roll it up to wring out every last drop – this is very important, so the cakes are not wet. Now, add the courgettes to the grated potatoes, along with the spring onions, mint, Feta and beaten eggs and, using two forks, lightly toss it all together.
Next, divide the mixture into 16 and shape into rounds about ½ inch (1 cm) thick, pressing them firmly together to form little cakes. They don’t have to be very neat – it’s nice to have a few jagged edges. Then lightly dust the cakes with the flour. To cook them, first pre-heat the oven to gas mark 7, 425°F (220°C) and also pre-heat the baking trays. Meanwhile, melt the butter and oil in a small saucepan, then brush the cakes on both sides with it. When the oven is up to heat, place the cakes on the trays, returning one to the top shelf and the other to the middle shelf for 15 minutes. After that, carefully turn the cakes over, using a palette knife and a fork, swap the positions of the trays in the oven and cook them for a further 10-15 minutes. Serve hot.
 
Found a recipe for Veggie Lasagne in 101 Veggie Dishes by BBC Books. You can buy it from Amazon - 2nd hand ones are 1p plus £2.80 p&p. Sent for mine when I saw this recipe was in it plus lots of other nice ones and it came in 2 days.


CHILL BEAN OPEN LASANGE - SERVES 4
1 tbsp olive oil - 6 syns but 1 and half each person.
1 onion - chopped
2 garlic cloves - crushed
chilli to taste
1 large courgette and 1 small aubergine - diced
410gm can of mixed beans - drained - or any you like
400gm can chopped tomatoes
2 tbsp tomato puree
250gm pack of lasagne sheets
handful of basil - torn - reserve a few leaves for garnish
120 gms cheese - grated - 1 HEX A each ---- or use 3 cheese triangles microwaved with a little milk and pour on top.

METHOD
Heat the oil and fry the onion for 3 mins then add the garlic, chilli, aubergine and courgette and fry for a further 2 mins.. Stir in the beans, tomato puree and tomatoes and season. Bring to the boil and simmer for 5 mins then add the basil.
Cook the lasagne sheets in boiling, salted water according to pack instructions. Drain then halve each sheet diagonally.
Place a spoonful of the mix on each plate and top with a quarter of he lasagne triangles. Top with the remaining bean mix, grated cheese and a basil leaf.
Serve with a green salad.

I used left over veg curry in mine and added the yoghurt.
