Minky's meals!

Hey DM - had the sticky chicken last night (and for lunch today!) and was really nice. Only thing I would do differently is cook the chicken and stir fry veg separately. I found it took too much of the sauce off the chicken and I wanted sticky pieces! Flavour was lovely though and I will be having again :) xx

I cook it separately ......... 'cos it overflows my pan and makes a mess on the hob :D

I'm going to do that next time - might even cook the chicken to have with a salad or couscous and roasted veg. It was gorge! Although I added more chilli xxx
 
Stuffed peppers tonight - damn they were hot but my god so good!

Well I wanted as much superfree as I could fit so I tricked the OH and used:
250g ex lean mince
3 courgettes grated (this is what bulked it out instead of using lots of mince)
Can chopped tomatoes
Onion diced up small
Can kidney beans
Garlic, chilli, oxo cube, touch of Tom purée and chilli powder.
Cook it all off on the hob so it thickens. Add some cooked rice - I used a packet of micro wave rice for 1/2 syn per portion.

This made loads! I filled 4 peppers (8 halves) and I have enough left over to make the same again!! Will freeze it and reuse another day I guess. It's yum. Xx

Was meant to be left over sticky chicken stir fry but that happened and as no one could get the lid off it went in le bin. Managed to scrape together 3 Finn crisps with dairylea light triangles and a mug shot. Was dead hungry yesterday so I was glad to have something rather than nothing! Xx

Yeah it was a sorry sight. Everyone at work was laughing so much about it (including myself!!) just glad I had summat else to munch cause I was one hungry gal xx
