Feels a bit like New Year .. where I start writing a diary and then it normally tails off after a week! ;)

Currently doing SW to support my mum who is well into her journey and doing really well! As she is over my house a lot child and dog sitting it seemed very unfair to be having all my low carb food calling to her from the fridge!

Anyway, giving Extra Easy a go, which was just starting when I last did SW so we shall see how it goes!

Sunday

HEB = 2x WW Thick Wholemeal
HEA = Skimmed Milk

Breakfast = Spagetti Hoops on Toast
Lunch = Roast Chicken Dinner
Dinner = Mushy Pea Curry & Pilau Rice

Superfree =Strawberries, Banana, Plums, Grapes, Baby Sweetcorn, Carrots, Broccoli, Mushrooms

Syns 13.5 = 1x Dairylea 3, 1x Mini Yorkshire 2.5, Crispy Potatoes 2, Gravy 2, Pilau Rice 2, Milkshake Lolly 2


Mushy Pea Curry


  • Fry onions & garlic in Frylight until soft.
  • Add cubed chicken breasts and fry until cooked through.
  • Add curry powder and stir through until the chicken is coated well.
  • Add mushy peas, baked beans, chopped tomatoes and mushrooms stirring thouroughly.
  • Leave to simmer for around 15 minutes
I've not included any measurements as I tend to use what I have in the house at the time but always include tomatoes and mushrooms for super free bulk in addition to the onion!

Monday

Breakfast = Bacon & Egg Breakfast Sandwich
Lunch = Mussels & Salad
Dinner = Pork Steaks, Mums Ratatouille & Crispy Potatoes

Superfree =Strawberries, Banana, Pear, Mushroom, Chinese Leaves, Tomato, Cucumber, Aubergine, Onion, Chopped Tomato, Courgette, Peppers

Syns 14.5 = 1x Dairylea Slice 2.5, Crispy Potatoes 3, Parmesan Cheese 2, Brown Sauce 2, Salad Cream 3, Hot Chocolate 2

Mum's Ratatouille

  • Fry onions & garlic in Frylight until soft.
  • Add cubed aubergine, courgette & peppers fry for a couple of minutes to soften.
  • Add tinned chopped tomatoes and simmer for around 15 minutes

Stores really well in the fridge so I have a huge tub of it and use it with grilled meat or as a pasta sauce as it is a good way to get your Super Free fix (love my mum!)

Dinner = Spicy Chicken Pasta inc Mums Ratatouille

Superfree = Banana, Pear, Apple, Aubergine, Onion, Chopped Tomato, Courgette, Peppers

Syns 15 = 1x Dairylea 3, 20g Mexicana Cheese 4, Tesco Chocolate Mousse 4, Milkshake Lolly 2, Hot Chocolate 2

Breakfast = Crunchy Bran, Muller Yogurt and Banana
Lunch = Chicken & Ham Salad
Dinner = Beany Bolognaise with Wholemeal Pasta

Superfree = Banana, Orange, Mixed leaves, Cucumber, Tomatoes, Onion, Chopped Tomato, Courgette, Mushrooms

Syns 15 = 30g Parmesan Cheese 6, Salad Cream 3, Strawberry Split Lolly 4, Hot Chocolate 2

Thank you for your comments, it's always a fine line between leading each other astray and supporting each other with mum so we shall have to see how it goes :giggle:

Syns 9.5 = Dairylea 2.5, Cous Cous 1.5, Rice 1.5, Chips 4

Really enjoyed the kebab - I am guestimating based on the non-branded guidelines but the portions were not as generous as normally kebab shops and they used a lot of onion filler as well! Either way, not feeling guilty which is a positive step for me ;)
 
We call the nights that my son is away "Date Nights" - use to try to pop out for a drink but now it just tends to be a movie at home or whatever funds permit :)

Getting a kebab is actually cheaper than popping up the road for a drink :rolleyes:

Gosh how slacking am I! A whole week has whizzed past! Still cannot believe it is June almost ... Christmas Cards will be in the shops soon again at this rate :rolleyes:
