Hi Blackhawk.
Thank you for your congrats.Must admit, I have enjoyed doing SW we have a great Consultant (which helps) & a great bunch of members, have a good laugh, good night & I look forward to each Thursday weigh-in, we have good "taster" night's & friendly banter, As I had always lost weight for over 33 weeks I am the only member who gets applause when I put weight on!!

Pete's Marmite Oven Chips

Pete’s Marmite Oven Chips

Serves 2

Ingredients

Maris Pipers or any fluffy potatoes (ff)
1tsp Marmite
Your choice of seasoning

Method

Cut the potatoes into chip sized pieces, leave the skins on for better flavour, place in a saucepan with salted water, cook for 5 mins with a tsp of marmite, drain the water & dry chips on a paper towel.
Spray an oven-proof tray with Fry Light, lay the chips in a single layer, sprinkle with salt & any seasoning you want, spray with Fry Light, cook at 200c for 10 mins then remove, turn chips over & spray with Fry Light, cook for another 12-15 mins until cooked & browned. Enjoy with mushy peas & a egg.

Pete’s Turkey Chilli Con Carni

Serves 2

Ingredients

1 onion, finely sliced (s) (sff)
1 tsp paprika
1 chilli, finely sliced (s) (sff)
1 Red pepper, finely sliced (s) (sff)
1 tbsp. dried oregano
1 tbsp. sweetener
2 cloves garlic, finely diced
3 sprigs of basil leaves
250g turkey breast mince (ff)
400g tin kidney beans (s) (ff)
400g chopped tomatoes (s) (sff)

Method
Brown the mince in a covered frying pan sprayed with Fry Light.
Add the onions, garlic, chilli & pepper, cook for a few minutes to soften, add the
oregano & basil leaves, cook for 5 mins add the tomatoes , paprika & sweetener, bring to the boil, then reduce to a simmer, cook for 20 mins, add the kidney beans, continue to simmer until the beans are hot, serve on a bed of rice.

That's funny that you get applause when you gain :) ohhh and we do marmite chips here too, I hate marmite but for some reason love marmite chips lol
 
marmite chips wow will be having those this week. Thanks Pete for another fab recipe when i am at a loose end what to do for tea i always make my way through your recipes and am never disapointed x

Pete your recipes are amazing. I use these regularly and they always taste great, problem is I'm finding SW hard at the moment lost my way. What would you eat on a typical day?
 
Hi Kazbryn.

For example, today I started with Baked Beans on 2 wholemeal toast, 1apple.
Dinner was Peanut Curry with rice & a side salad
Tea will be Salmon with Couscous & a side salad
375ml skimmed milk used during the day for drinks & an egg custard
1 Egg custard made with 1/6Hea of the milk
A glass of Robinson sugarfree Apple & Blackberry cordial with Dinner & Tea.

Ee plan
Breakfast=6syn
Dinner=5syn
Supper=1syn

I'm sorry pete if this is a silly question but your peanut curry looks deelish but I'm not sure how this would taste. Does it taste really nutty ?

It's hard to explain the taste of peanut curry, I find it makes a smoother curry with a lovely smell as well as having a slight nutty taste, it would depend if you had the smooth or nutty peanut butter, I only use the nutty one.Hope this helps...
 
Pete: thank you for your leek and mushroom risotto receipe, just made it, yummers! We didn't have peas (and I added chicken lol) the bulk of it was your receipe

Pete’s Asian Salmon with stir-fry noodles

Serves 2

Ingredients

*1Red chilli, finely diced (s) (sff)
*1 Pepper, finely sliced (s) (sff)
*1 Bunch spring onions, sliced (s) (sff)
*1 Carrot, cut into matchsticks (s) (sff)
* Or a pre-packed stir-fry
1tbsp light soy sauce
1tbsp sunflower oil (6syn/2=3 syn per person)
1tbsp rice wine
1tbsp sweet chilli sauce (1.5 syn/2=0.75syn per person)
2 salmon fillets (ff)
150g dried noodles (ff)
Chopped fresh coriander
Drizzle of honey (1tbsp-2.5syn/2=1.25 syn per person)

Method

Preheat the oven to 180°C, fan 160°C. Place the salmon fillets in a shallow dish. Mix the soy sauce, honey, rice wine and sweet chilli sauce, brush over the salmon and leave to marinate for 15 minutes, if possible. Place the salmon on a greased baking tray, reserving the marinade. Bake for 12-15 minutes until tender and the fish flakes easily. Meanwhile, cook the noodles as directed on the packet. Drain well.
Heat the oil in a wok and fry the pepper for 2-3 minutes until slightly softened. Add the chilli and cook for a few seconds. Add the drained noodles, reserved marinade, carrots and spring onions. Heat through, then stir in the coriander. Serve with the salmon on top.
* Or use stir-fry pack, cooked as instructed, then add the noodles, serve with the salmon on top.

Hi Pete - Made your sweet n sour tonight using diet Fanta. WOW, it was D-LISH!!! Will deff be making that again. You are a total inspiration. Although I have done SW many years ago EE was not part of the plan then. I now do EE most days and find I can cook almost every dish I used to eat pre-SW, they just need a bit of modification. I fully intend to keep plodding thro your recipe archives!
