Last nights supper, leek & potato soup with marmite toasties!


Pete’s Leek and Potato Soup-2



Serves 4
Ingredients

900ml Knorr Chicken Stock (made from 1 Knorr Chicken Stock Pot dissolved in 900ml boiling water)
1 small onion, peeled and finely chopped
2 large leeks, finely chopped
1 small potato, peeled and finely chopped
1-2 tbsp. very finely chopped chives
½ Tsp mixed herbs

Method

Using a large saucepan, sprayed with Fry Light, add the onion, leek and potato and cook over a high heat for 10 minutes, stirring constantly so that the vegetables sweat (that is cook without colouring.)

Make up the stock with hot water. Add the stock to the sweated vegetables and bring to the boil. Cover and cook over a medium heat for 12 minutes.


Using a hand blender blitz until smooth.
Sprinkle with the chopped chives!
Served with Marmite Toast!

Wow they look gorgeous, I just found the recipe for them yesterday, definitely going to give them a go, thanks for putting the picture up xx
 
I recommend Longley Farm cottage cheese (fat free) fom morrisons or Asda its very firm and then water isn't added, it seems sloppy buy keep mixing and the mash swells up, definitely going to use my cheese as hexb to add, the ones above were just cottage cheese, eggs and smash. They didn't last 5 minutes!!

A slight slant on my favourite recipe.....


Pete’s Spicier Creole Jambalaya-2

Serves 4 – 2 syns per serving

Ingredients

1x 175g chicken breast, cut into bite sized pieces
2 tablespoons Cajun spice
1x medium onion, chopped
2x garlic cloves, crushed
½ tspTurmeric
1x fresh red chilli, deseeded and chopped finely
1x yellow and red pepper, deseeded and chopped
500ml chicken or vegetable stock
4x Sainsbury’s Spicy & Succulent mini Chorizos=80g 2 Syn each.
1x 400g can chopped tomatoes
200g long grain rice
Parsley, chopped roughly
Bay leaf
* Tabasco, if you like it hotter!

Method

Mix the Cajun with a small amount of water to make a paste, place the chicken breast in a small bowl and toss it to cover it with the sauce.

Spray a large frying pan with low fat cooking spray. Add the chicken and stir fry for 4 minutes.

Wash rice under cold water several times until the water runs clear, put to one side.
Stir in the onion, garlic, chilli and peppers and fry for another 4 minutes until they are slightly browned and softened.

Add the stock, chorizo, tomatoes, rice and the bay leaf, then bring it all to a boil. Turn down the heat and simmer for about 30 minutes until the rice is cooked and has absorbed all the liquid. Drizzle with the lemon juice

* Add Tabasco, if you want it hotter

Serve with a salad.

Of course I saw it in the original recipe book at group last night and then looked it up on here and this is the one I used.....
(the one in the book also had bacon in it)


Cheesy Tuna Quiches
Free on Red & Extra Easy!

Ingredients:
1 tin of tuna
3 eggs
Healthy extra A choice of cheese
1 onion
salt & pepper
1 tomato

1. Fry off the onions in a pan until golden brown
2. Flake tuna into a bowl, add the onions & cheese
3. Beat the eggs and add salt & pepper then mix the ingredients all together
4. Transfer to either an ovenproof dish or silicone cases, add the sliced tomatoes on top
5. Bake in oven on gas mark 6 for around 25-30 minutes or until golden brown.

Tonight's dinner is syn free chilli!!! I've made quite a bit but this is one recipe that no one believes us healthy!!! ( so they all eat it) love slimming world!

It's still bubbling away nicely on the hob!! Yum!
