All your meals look scrummy! You lot have given me a real in centive to keep going and not give up again. How can I possibly when you can eat like that????

Well Day 1 was yesterday and i decided to have a roast! Nothing fancy, just the usual roast Gammon minus fat, veg and roasted parsnips and potatoes using fry light. The bisto too of course which I allowed 2.5 syns for. I did take a picture though....

Here is what I had for lunch. Jacket potato with tuna mayonnaise (using hellmann's extra ligh - 1.5 syns and 3 laughing cow light, part of HEA). Green salad with balsamic vinegar drizzled over it.
Mmmmmmmm feels warm in my tummy :D

Awww thanks, it was utterly delicious too! I have a day off today so I had time to bake the potato in the oven for 1.5 hours. SUCH a difference compared to cooking in the microwave!
 
I always cook jackets in the microwave then heat oven really high, spritz outside of potato with Frylight & sprinkle with salt and then put directly on the oven shelf for 10 mins. Makes it lovely and crispy on the outside but in a fraction of the time!

Here's my slapdash, nothing special dinner made up of leftovers. Went out for coffee with a friend, lost track of time and came home ravenous! So I reheated some rice, small piece of grilled turkey and spicy tomato sauce. Still tasty though :D

Hi,
New here but have been looking at this thread and salivating!! So thought I would add my pics too. Here is my breakfast and dinner for today. I started off as a Red day, but due to car trouble, lunch went off plan, although I did just resort to an EE day instead and had baked potato with tuna!!
Anyway, breakfast is self explanitory, and dinner was roast chicken, roast pots, in fry light, mixed veg, and mixed roast veg, with herbs and frylight - sweet pot, butternut squash, carrots, parsnips, and some gravy. mmm.

Ok here goes..

SYN Free Chilli:

Lean Steak Mince ( quantity to suit )
2 Large Onions ( Chopped )
1 Diced Carrot
2 sticks Celery ( Finely Chopped )
5 cloves Garlic ( Crushed or Finely Chopped )
2 Teaspoons Smoked Paprika
2 Teaspoons Chilli Powder
1/2 Teaspoon White Pepper
1/2 Teaspoon of oregano
2 Teaspoons Cumin
2 Sweet Red Peppers ( Diced )
1 Chilli Pepper ( De-Seeded and Chopped )
2 Tins Chopped Tomatoes
2 Tins Mixed Beans
1 Pint of Stock ( Beef )
6 Soft Prunes ( Finely Chopped )

Method:
In a large frying pan or wok brown mince.
Add Spices, Onions and Celery.
Cook until soft.
Add garlic, peppers and chilli.
Add tinned tomatoes, stock and prunes.
Simmer for 30 mins.

Serve with Rice......

The above is for 6 servings if you use 1Kg of Mince we used prob 1/2 kilo of mince and it will do 4 good servings :)

Greek Donner Kebab:
Syn Free on EE or RED

1Lb Lean lamb mince
1 Small Onion
1 Teaspoon Oregano
1 Teaspoon Thyme
1 Teaspoon Sea Salt
1/4 Teaspoon Black Pepper
2 Teaspoons Crushed Garlic.

Preperation:
Peel and finely chop the onion
Peel and crush Garlic
Place all ingredients into a food processor and blend ( this effects the texture of the meat it maes it smooth so it binds together and is not grainey like minced meat )
Cover and leave in the Fridge for 2 hours or longer
Shape into desired form and skewer
Cook in George Foreman until ready ( dependant on the shape and size of pieces )
 
Chicken Tikka Massala:

1 Syn Per portion:

4 Chicken Fillets
2 Large Onions
1 Tin Chopped Tomatoes
4 Tablespoon Pataks Tikka Paste

Chop Chicken and Onion
Soften onion with fry light
Add Tikka Paste
After 3 mins add Chicken
Cook untill Chicken is Sealed
Add Tomatoes and Water ( 100Mls )
Bring to boil
Reduce heat and simmer for 30 mins.

The Above makes 4 Servings so the entire pot would be 4 Syns

Serve with Rice...
