I've been asking on various threads for someone to post that recipe as I'm overseas and can't get the mags. Would you be able to do that for me? Or do you know a place on here that would have the recipe? Everybody keeps talking about it but I want to make it!! Thanks if you can help! :sign0163:

Hi do u have recipe for fishcakes? X
hi there, yes hun of course ;

ok
salmon fishcakes
serves 2,
1 large potato
12oz/340g salmon
1 egg white
small handful of chopped parsley
small handful of dill (i didnt have any in)
4 spring onions chopped
1 garlic clove crushed
1 tsp ground ginger (i used lazy ginger)
salt and pepper
fry light

the recipe says to boil the whole potato in its skin for 20 mins then take skin off and roughly mash.
well i was doing mash for the kids anyway so to save time ,i peeled it and cut it up, then removed it from the pan and mashed it.
put the salmon cut into chunks, egg white, parsley, dill, spring onion, garlic and ginger into a food processor and pulse until combined not pureed! season and add to mash. combine thoroughly.
divide mixture into 4 burger shapes . ( i did 4 medium sized then did a few little baby ones to have in packed lunch boxes.
recipe then says to chill in fridge overnight !!!!!!!!!!!! yeah right well why didnt it tell me that earlier - no time for that i need to eat so i shoved them in freezer for 10 mins while i got the potato and cheese pie ready.

oven preheated to 180/350f/ gas 4. place on a non stick tray spray with fry light and cook for 20 mins or until browned.

now i did think they were quite dry so i had mine with a sweet chilli mayo dip. i made it with 2 tablespoons extra light mayo (0.5syn) and a tablespoon sweet chilli sauce. (cant remember syn value - will run off and get it.) that was really nice and made a huge difference.

enjoy - post your picture when its done. xxx
