Here's the recipe

CHEESY MUSHROOM AND SPRING GREEN JACKET POTATO
------------------------------------------------------------------------
A very quick and easy lunch and extremely yummy.

I made it just for myself so double up on quantities if needed.

1 jacket potato
6 mushrooms sliced
1 large leaf of spring green or Savoy cabbage shredded finely
1 tsp mustard( I used wholegrain)
30g cheese (I used cheddar)
2 tbsp milk
1 clove garlic sliced

Cook jacket potato, then spray a pan with fry light add mushrooms and garlic, cook 2-3 mins until brown, remove from pan, frylight again and cook spring greens for 5 mins until tender.
Mix mushrooms into greens and put on top of jacket.
In the pan add the cheese grated, the milk and mustard and heat until cheese is melted, stir continuously to stop it from curdling.
Pour on top of mushrooms and serve with black pepper and a sprig of coriander.

Free on green & extra easy, add 6 If not using cheese as healthy extra.

Oooo do you have a recipe for the chorizo frittata? Absolutely love chorizo but am struggling to find recipes for it where its not too high syn....thanks :D

Hi chook yes here goes

40g chorizo ( check syns on pack you buy but mine worked out 3 syns for half of frittata )
8 eggs
1 onion
Half red pepper
3 slices bacon
8 mushrooms

Fry chorizo in dry pan,then add chopped onion, And red pepper , then add chopped bacon and after a few mins add mushrooms.
beat the eggs ,and add to pan. Add cheese of your choice
Mix around in pan, cook for a few mins then place under grill until browned
Mmmmmm
 
SCAN BRAN CHOCOLATE & COFFEE CAKE - by another sw minimins'er.

5 Scan bran (HEXB or 5 Syns)
3 eggs
Sweetener 4 tbsp
1 tbsp cocoa powder (1 Syn)
1 tbsp golden syrup (2.5 Syns)
2 tbsp DE hazelnut coffee (can use any coffee you like)
1.. Soak scan bran in boiling water to soften it. Drain and mash.
2. Add all ingredients and mix well
3. Pour into a microwaveable dish and cook for 7 mins on high 4. ( I cooked it in the oven for 15 mins on gas 6)

3.5 Syns for whole cake if using scan bran as a HEXB, I'd used mine up so synned it was 8.5 for the whole cake , I cut it into quarters and had it warmed up for the other days at 2 syns a time.

I have tried most scan bran recipes and not liked them but this was good, def my favourite, had a tiramisu kinda taste so that's my next venture to make it then build a tiramisu dessert.

Well, I was going to as I found a sw recipe but then saw these in morrisons for 4.5 syns each and thought- what's the point , these are bound to be nicer than mine lol xxx

I didn't think you could get spring rolls that low in syns! Thanks, that saves me a job! xxx your whole meal looks gorgeous! xxxx

Chicken mixed wi mayo, red onion, yellow pepper, cucumber, tomato, chilli powder, pepper wi baby new potatoes, really yummy
