Quorn & Vegetable Casserole

    Quorn and Vegetable Casserole
    this is not a ww recipe and I have worked out the points myself.

    Ingredients

    • 1 small onion(s), chopped
    • 1 medium Pepper, red, chopped
    • 2 small carrot(s), chopped
    • 1 1/2 tablespoon Kraft Philadelphia Light
    • 1 tablespoon Marigold Health Foods Ltd Swiss Vegetable Bouillon Powder, dissolved in 1/4 pint boiling water
    • 1 clove garlic, crushed
    • 1 teaspoon thyme
    • 120 g broad beans
    • 3 portion quorn fillet, sliced
    • 1/4 pint semi-skimmed milk
    Instructions


    1. Heat a large saucepan with Frylight and fry onions and garlic for 5 mins.
    2. Add quorn and fry for a further 3 mins.
    3. Add pepper and carrots and fry for 5 mins sitrring regularly.
    4. Add stock, milk, thyme and philly, bring to boil then reduce heat to a gentle simmer for 5 mins.
    5. Add broad beans and simmer for a further 10 mins.
    6. Serve with 250g mashed potato (2.5 ponts)
