Salmon Quiche

I made this the other night and really enjoyed it. I prefere it cold with salad.

1 tin of red salmon ( you could use pink as its cheaper)
half onion
half red and green peper
1 garlic clove
1 tub very low fat cottage cheese
3-4 eggs
Salt and pepper to taste.

Whisk eggs in a big bowl,Mix in cottage cheese. Finely chop onion,peppers and garlic and mix into the cottage cheese and eggs. Flake Salmon into the mixture taking care you remove all the bones and skin and gently fold together. Spray a quiche tin with frylight and add the mixture. Cook on gas mark 5 for about 20 mins or until lightly browned and set. For anyone who doesnt like cottage cheese dont worry you can not taste it ( i dont like it either lol). . I cut it into wedges when cold and have it with salad.Its very tasty!! You could add any veg you wish but be careful it doesnt over power the taste of the salmon. Enjoy!
