Tunisie Salad

Hi guys, I'm new here. Just thought I'd post this, it's nothing revolutionary but it is the quickest, most filling and delicious thing I eat - it was first made for me by my uncle who's from tunisia.

- 1 can of tuna in spring water
- 1 bag of boil in the bag rice (can use pasta also - I love it with tagliatelle)
- green pepper
- red pepper
- cucumber
- tomato
- red onion (all cut up into small chunks)

cook the rice and let it cool (it always tastes nicer cold - really refreshing)

put the rice in bowl and add the tuna and salady bits and mix together

make a dressing of lemon juice, light vinegar (i smother mine with both) and extra virgin olive oil (HE)

I could literally eat this all day every day as it is so fresh tasting and filling - definately better cold with rice but warmed through if eating with pasta.
