I made this last night and it really was delicious so thought I would share:
This recipe serves two.
- 2 x Cod Fillets
- 2 garlic clove, finely chopped
- 1 aubergine, chopped into chunks
- 2 Large Mushrooms, chopped into chunks
- 1 red onion, diced
- 1 Red Pepper, chopped
- 1 Courgette, chopped into chunks
- 1 tin of chopped tomatoes
- 1 teaspoon of sweetener
- 1 tablespoon of balsamic vinegar
- a pinch dried oregano
In a large deep pot, fry the garlic in two spays of fry light for one minute, add the onions and fry for another minute. Then add the, aubergine, mushrooms, pepper, courgette and fry on a low heat for 20 minutes, then add the tomatoes, sweetener, balsamic and oregano and cook for a further 20 minutes. Stir occasionally. Meanwhile season the cod fillets wrap in foil, and bake in the oven for 15 to 20mins, I use 165 degrees (fan assisted).
Serve the cod on top of the ragu, I added a dollop quark to give a little creaminess to the sauce.
